Beer-Braised Beef Short Ribs

- 5 pounds beef short ribs
- 1 14 ounce can beef broth
- 1 12 ounce can dark beer
- 1 medium onion, cut into thin wedges
- 1/4 cup molasses
- 2 tablespoons balsamic vinegar
- 1 teaspoon dried thyme, crushed
- 1 teaspoon bottled hot pepper sauce
- 1/2 teaspoon salt
- Mashed potatoes or hot buttered noodles (optional)
- Fresh thyme leaves (optional)
Quick Salmon Chowder

- 2 cups frozen pepper stir- fry vegetables (yellow, green, and red pepper, and onion)
- 2 tablespoons minced seeded jalapeno pepper
- 1 tablespoon margarine or butter
- 2 tablespoons flour
- 2 cups fat-free milk
- 1 cup fat-free half-and-half
- 2 cups refrigerated diced potatoes with onions
- 1 15 ounce can salmon, drained and well flaked
- 1/4 cup snipped watercress
- 2 tablespoons lemon juice
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
Mediterranean Beef Ragout

- 1-1/2 pounds beef stew meat, trimmed and cut into 1-inch cubes
- 1 tablespoon olive oil
- 2 medium onions, cut into wedges
- 3 medium carrots, cut into 1/2-inch slices
- 1 14-1/2-ounce can diced tomatoes, undrained
- 1/2 cup beef broth
- 2 cloves garlic, minced
- 1-1/2 teaspoons dried thyme, crushed
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 medium zucchini, halved lengthwise and cut into 1/4-inch slices
- 6 ounces fresh green beans, cut into 2-inch pieces (1-3/4 cups)
- Hot cooked whole wheat couscous or brown rice (optional)
Margarita-Grilled Chicken Salad

- 4 medium skinless, boneless chicken breast halves
- 1-1/2 cups margarita drink mix (contains no alcohol)
- 1 tsp. ground cumin
- 1 tsp. finely shredded lime peel
- 1/2 cup mayonnaise or salad dressing
- 2 Tbsp. lime juice
- 1/8 tsp. cayenne pepper
- 4 medium tomatoes, sliced
- 2 medium avocados, halved, seeded, peeled, and sliced
- 1/2 of a medium red onion, thinly sliced and separated into pieces
- 1/4 tsp. cracked black pepper

Bacon Deviled Egg Salad

So good - as stated in the recipe - it would make a super cute appetizer stuffed in mini bell peppers
- 10 large eggs
- 4 ounces bacon, chilled in freezer for 20 minutes
- 1/3 cup homemade Paleo mayonnaise or Primal Kitchen Mayonnaise
- 1 tablespoon Dijon mustard
- 2 tablespoons fresh lemon juice
- 1 large shallot, minced (about 1/4 cup)
- 1/4 cup minced fresh Italian parsley leaves
- 2 tablespoons minced fresh chives
- 1 1/2 teaspoons Diamond Crystal brand kosher salt (use 1/2 the amount if you're using a fine grain salt)
- 1/4 teaspoon ground black pepper

- 15 oz. chicken breasts, chopped into bite-sized pieces (15 protein)
- 1 1/2 cups onion, chopped (1 carb)
- 3 cloves garlic, chopped
- 1 jalapeno pepper, chopped (removed seeds for less heat)
- 2 cups green bell pepper, chopped (1 carb)
- 4 cups fresh spinach or about 4 oz. frozen spinach (estimate, use what you want)
- 1 tablespoon cumin
- 2 1/2 teaspoons olive oil (10 fat)
- 1 - 14 oz. can chopped tomatoes (1 carb)
- 5 tablespoons avocado, chopped (5 fat)
- 1 quart chicken stock
- 1/4 cup cilantro, torn
- 1/3 cup lime juice (a little over 2 limes) (1 carb)
- 1 1/2 cups black beans, drained and rinsed (about 1 can) (6 carb)
