Coconut Lime Chicken Soup

- 1 2 - 2 1/2 pound deli-roasted chicken
- 1 15 ounce can unsweetened coconut milk
- 2 cups water
- 1/4 cup lime juice (2 medium limes)
- 3 medium carrots, thinly-sliced diagonally (about 1-1/2 cups)
- 1 tablespoon soy sauce
- 2 teaspoons Thai seasoning blend
- 1/4 teaspoon salt
- Thai seasoning blend (optional)
- Fresh cilantro (optional)
- Lime wedges (optional)
Poached Cod with Lemon and Capers

Very good - we used tilapia which worked fine
- 2 or 3 green onions, cut into 2 inch long pieces
- 1 tablespoon extra virgin olive oil
- 1 red onion, cut lengthwise into thin slices
- 2 tablespoons capers, drained well
- 1 carrot, cut into thin matchstick pieces
- 4 (4 oz.) cod fillets (or other white fish)
- 2 lemons

- 1/4 cup coarsely chopped cooked ham
- 1/2 cup cooked cut asparagus or broccoli flowerets
- 2 slices process Swiss cheese (3/4 ounce each), torn
- 2 tablespoons dairy sour cream
- 1 tablespoon finely chopped onion
- 1 teaspoon Dijon-style mustard or prepared mustard
- 1/8 teaspoon caraway seeds (optional)

- 1/2 cup butter or ghee
