Ingredients

  • 4 oz bacon (6 thin slices)
  • 3 large jalapenos, sliced
  • 6 large eggs
  • 2 T raw honey
  • 1/2 cup butter or ghee
  • 1/2 cup coconut flour
  • 1 T tapioca flour
  • 1/2 t sea salt
  • 1/4 t baking soda
  • 1/4 cup milk or water

Preparation

Step 1

Preheat oven to 400.

Place jalapeno slices and bacon on a wire rack and set on a baking sheet. Roast for 10 minutes.

Cool slightly then de-seed jalapenos.

In a food processor, pulse bacon and jalapeno peppers.

Whisk the dry ingredients together in a large bowl until well combined. Add the wet ingredients, stir until incorporated.

Fold in the jalapenos & bacon.

Line a loaf pan with parchment paper - grease and add the batter.

Bake at 400 for 40 to 45 minutes or until a toothpick inserted comes out clean.

Serve warm
