Squash Soup

New England Clam Chowder

- 1 cup coarsely chopped clams
- 2 jars clam juice
- 2 thick slices bacon, cut in lardons (squares)
- 1 medium diced onion
- salt
- 3/4 lbs yukon potatoes, cut in 1/2 inch dices
- 2 T flour
- 3/4 cup heavy cream
- 3/4 cup milk
- 2 bay leaves
- pinch of thyme
- 1 shake hot sauce
- EVOO

250 greased baking sheet. Whip egg white and water till frothy
- 1 egg white
- 1 T water
- 1 lb pecans halves
- 1 cup sugar
- 3/4 tsp salt
- 1/2 tsp cinnamon
Lemon Poppy Seed Bread

350. Grease loaf pan. Beat butter and eggs, then beat in remaining ingredients as listed
- Glaze:
- 1/2 cup softened butter
- 1 cup sugar
- 2 eggs
- 1 tsp grated lemon peel
- 1 1/2 cups flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/3 cup milk
- 2 T poppy seeds
- Juice from 1 lemon
- 1/2 cup confectionary sugar
- 2 T lemon juice
- 1 tsp melted butter
- 1/8 tsp lemon extract
- Mix with wire whisk, glaze should have the consistency of heavy cream.
Snicker Brownies

Preheat over 350. Grease 9x13 cake pan with butter
- 1 stick butter, melted and some extra for greasing pan.
- 1 cup sugar
- 2 eggs
- 2 T water
- 1/2 tsp vanilla
- 1 pinch salt
- 1/2 tsp baking powder
- 1/2 cup unsweetened cocoa powder
- 3/4 cup flour
- 8 fun-size snickers bars, chilled in frig
Swiss Chard & Pasta w/Turkey Meatballs

- 1 egg
- 2 T water
- 1 lb ground turkey
- 1 1/4 dried breadcrumbs
- 1/3 cup parmesan cheese
- 2 T fresh finely chopped parsley
- 2 mined cloves garlic
- 1 Tsp kosher salt, fresh ground black pepper
- 8 cups low sodium chicken stock
- 2 carrots diced 1/4 "
- 1 cup penne pasta
- 5 cups white swiss chard, or escarole leaves, not stems, coarsly chopped
- 1 cup shredded mozzarella
- Fresh shredded parmesan cheese
