Pumpkin Soup

  • 3 T butter
  • 1 Cup chopped onion
  • 2 minced garlic
  • 1/8 tsp crushed red pepper
  • 2 cups chicken broth
  • 1/2 cup uncooked orzo
  • 1 1/2 cups half and half
  • 1 T flour
  • 1 15 oz can pumpkin



Step 1

saute onion till tender, stir in pepper, cook 1 min. Add broth, bring to boil, stir in orzo simmer till tender. Shake 1/2 & 1/2 and flour, stir into mixture, cook till slightly thickened and bubbly. Stir in pumpkin and heat through. Serve, sprinkle with cracked black pepper and top with sliced red pepper strips.
