Lemon Poppy Seed Bread

Ingredients

  • Glaze:
  • 1/2 cup softened butter
  • 1 cup sugar
  • 2 eggs
  • 1 tsp grated lemon peel
  • 1 1/2 cups flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/3 cup milk
  • 2 T poppy seeds
  • Juice from 1 lemon
  • 1/2 cup confectionary sugar
  • 2 T lemon juice
  • 1 tsp melted butter
  • 1/8 tsp lemon extract
  • Mix with wire whisk, glaze should have the consistency of heavy cream.

Preparation

Step 1

350. Grease loaf pan. Beat butter and eggs, then beat in remaining ingredients as listed. Bake 55 mins or till toothpick comes out clean in center. Cool in pan 15 mins., then remove and trasnfer to wire rack. Prick w/fork and pour glaze over top. Cool completely
