Almond Crusted Pork w/Honey Mustard Sauce
- 1 cup dry breadcrumbs
- 1/2 slice almonds
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp ground pepper
- 1 egg white, beaten
- 1 lb pork tenderloin cut into 1/2 in thick slices
- 1/4 cup honey
- 2 T reduced sodium soy sauce
- 2 T Dijon mustard
425. Grease wire rack with baking sheet
Place crumbs, almonds, powder, s&p in food processor; pulse till almonds are coarsly chopped.
Dip pork in egg white and coat with almond mixture. Spray both sides of pork with cooking spray.
Bake till golden brown abour 20 mins.
Meanwhile, whisk honey, sauce. and mustard in small bowl. Serve
