- 4 egg yolks
- 1/4 cup sugar
- 1/2 tsp vanilla
- 4 egg whites
- 1/2 cup sugar
- 2/3 cup cake flour
- 1 tsp baking powder
- 1/4 tsp salt

- 3/4 cup sugar
- 2 tbsp corn starch
- 1 tbsp grated lemon rind
- 1/8 tsp salt
- 1/3 cup lemon juice
- 3/4 cup water
- 1 egg beaten
- 1 tbsp butter
"Quick" Mini Cheesecakes

- 3 8 ounce packages cream cheese, softened
- 1 cup sugar
- 3 eggs, beaten
- 1 tsp vanilla
- 24 vanilla wafers
- 1 16 ounce can pie filling, your choice

- 1/2 cup sour cream

In a large bowl, combine the cake mix, water, oil and egg whites; beat on low speed for 30 seconds
- FROSTING:
- 1 package white cake mix (regular size)
- 1-1/4 cups water
- 1/3 cup canola oil
- 3 egg whites
- 1 cup coarsely crushed cream-filled chocolate sandwich cookies (about 8)
- 1/2 cup shortening
- 4 to 4-1/2 cups confectioners' sugar
