Quick Mini Cheesecakes 1 Picture


  • 3 8 ounce packages cream cheese, softened
  • 1 cup sugar
  • 3 eggs, beaten
  • 1 tsp vanilla
  • 24 vanilla wafers
  • 1 16 ounce can pie filling, your choice
  • GARNISH - optional
  • 1/2 cup sour cream
  • 1 tsp sugar mint leaves shaved chocolate

Step 1

Preheat oven to 325. Cream softened cream cheese well. Add sugar and mix well. Add eggs and vanilla. Beat until smooth. Line muffin tins with baking papers and place 1 vanilla wafer in bottom of each. Place 1 heaping tbsp. of cream cheese mixture in each. Bake for 20 to 25 minutes. Let cool. Remove from pans (centers will sink). Place 1 tsp of pie filling in each and refrigerate.

Mix sour ream and sugar. Put 1/2 tsp in center of each cheese cake and top with fresh mint leaves or shaved chocolate.
