Ingredients

  • 3

    8 ounce packages cream cheese, softened

  • 1

    cup sugar

  • 3

    eggs, beaten

  • 1

    tsp vanilla

  • 24

    vanilla wafers

  • 1

    16 ounce can pie filling, your choice

  • GARNISH - optional

  • 1/2

    cup sour cream

  • 1

    tsp sugar mint leaves shaved chocolate

Directions

Preheat oven to 325. Cream softened cream cheese well. Add sugar and mix well. Add eggs and vanilla. Beat until smooth. Line muffin tins with baking papers and place 1 vanilla wafer in bottom of each. Place 1 heaping tbsp. of cream cheese mixture in each. Bake for 20 to 25 minutes. Let cool. Remove from pans (centers will sink). Place 1 tsp of pie filling in each and refrigerate. Mix sour ream and sugar. Put 1/2 tsp in center of each cheese cake and top with fresh mint leaves or shaved chocolate.
