Sara's Easy Chocolate Chip Cookies

This is the easy chocolate chip cookie recipe that I have used in a pinch
- 2 cups + 2 tbsp ap flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 12 tbsp butter, melted and cooled
- 1 cup packed brown sugar
- 1/2 cup granulated sugar
- 1 egg + egg yolk
- 2 tsp vanilla
- 1 1/2 cup semi sweet chocolate chips
Parmesan Smashed Potatoes

Place the potatoes and 1 tablespoon of salt in a 4-quart saucepan and add cold water to cover
- 3 pounds red new potatoes, unpeeled
- 1 tablespoon kosher salt, plus 2 teaspoons
- 1 1/2 cups half and half
- 1/4 pound unsalted unsalted butter
- 1/2 cup sour cream
- 1/2 cup freshly grated Parmesan
- 1/2 teaspoon ground black pepper
Roasted Broccoli and Feta Salad

- 2 heads broccoli, cut into florets
- 2 cups cherry tomatoes
- 1/4 cup, plus 2 tablespoons extra-virgin olive oil
- Kosher salt and freshly ground black pepper
- 2 1/2 ounces baby arugula (about 3 large handfuls)
- 4 ounces crumbled feta cheese
Pioneer Womans Beef Brisket

Combine first five ingredients in large roasting pan (a disposable is just fine)
- 2 cans Beef Consomme
- ◾1/2 cup Lemon Juice
- ◾1-1/2 cup Soy Sauce
- ◾5 cloves Chopped Garlic
- ◾2 Tablespoons Liquid Smoke
- ◾10 pounds Beef Brisket
Eggplant Gratin

Preheat the oven to 400 degrees F
- Good olive oil, for frying
- 3/4 pound eggplant, unpeeled, sliced 1/2-inch thick
- 1/4 cup ricotta cheese
- 1 extra-large egg
- 1/4 cup half-and-half
- 1/2 cup plus 2 tablespoons freshly grated Parmesan
- Kosher salt
- Freshly ground black pepper
- 1/2 cup good bottled marinara sauce
Oatmeal Chocolate Chunk Cookies

preheat oven to 350 beet butter and sugars and medium speed with an electric mixer at medium speed until creamy
- 1 cup butter softened
- 1 cup firmly packed brown sugar
- 1/2 cup sugar
- 2 large eggs
- 2 tsp vanilla extract
- 2 cups ap flour
- 1 tsp baking soda
- 1/2 cup salt
- 3 cups uncooked regular oats
- 1 pack semisweet chocolate mega morsels
- 1 cup chopped toasted pecans
Pecan Squares

preheat the oven to 350 degrees
- crust:
- 1 1/4 pounds unsalted butter, room temperature
- 3/4 cup granulated sugar
- 3 extra large eggs
- 3/4 tsp pure vanilla extract
- 4 1/2 cups all purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- topping:
- 1 pound unsalted butter
- 1 cup good honey
- 3 cups light brown sugar, packed
- 1 tsp grated lemon zest
- 1 tsp grated orange zest
- 1/4 cup heavy cream
- 2 pounds pecans, coarsely chopped
Traditional Salisbury Steak

In a small bowl, combine the egg, bread crumbs, garlic powder and pepper
- 1 egg
- 2 tablespoons dry bread crumbs
- 1/2 teaspoon garlic powder
- 1/4 teaspoon pepper
- 3/4 pound lean ground beef
- 3 tablespoons all-purpose flour, divided
- 2 teaspoons olive oil
- 3/4 cup water
- 2 tablespoons ketchup
- 2 teaspoons Worcestershire sauce
- 1 teaspoon beef bouillon granules
- 1 medium onion, quartered and sliced
- 1 (4 ounce) can mushroom stems and pieces, drained
Filet with Crab Topping

Directions Season steaks with salt and ground black pepper
- 2 bacon wrapped beef tenderloin steaks, cut 11/2inches thick* 1/2 cup long grain rice
- 3 tablespoons snipped fresh parsley
- 1 tablespoon butter
- 1/3 cup half and half or light cream
- 1/2 ounce cream cheese
- 2 tablespoons thinly sliced green onion
- 1/2 teaspoon seasoned pepper or herb pepper seasoning
- 2 ounces drained, flaked canned crabmeat (about 11/2 cups)
