Onion Relish (Zippy)

Bring onions and water to a boil and reduce heat
- 3 large onions finely chopped
- 2 tbs. water
- 1/2 cup tomato sauce
- 3 tbs. catsup
- 1 1/2 tsp. sugar
- 1/2 tsp. oregano
- 1/4 tsp. salt
- 1/4 tsp. garlic
- 1/4 tsp. crushed peppers
Frosty Mint Ice Cream Pie

Soften ice cream. Generously grease bottom and sides of two 9" pie pans
- Pie Shell:
- 1 pkg. of Pillsbury Plus Devils Food, Dark Chocolate or
- Chocolate Mint
- 3/4 cup of Pillsbury ready to spread Chocolate Fudge
- Frosting Supreme
- 3/4 cup of water
- 1/4 cup of oil
- 6 cups (1 1/2 quarts) mint chocolate chip ice cream
Crescent-Topped Ratatouille Casserole

In 10" skillet, heat oil over medium-high heat until not
- 1 tbs. olive oil
- 1 small eggplan (1 1/4 lb.) cut in 3/4" cubes (4 cups)
- 1 medium zucchini, sliced
- 1 medium onion, sliced
- 1 medium green pepper, cut into 1" pieces
- 1 clove garlic, finely chopped
- 1 14.5 oz. can diced tomatoes, undrained
- 1 8 oz. can tomato sauce
- 1/2 tsp. dried basil leaves
- 1/4 tsp. Italian seasoning
- 1//8 tsp. coarse ground black pepper
- 1 15.5 oz. can dark red kidney beans, drained, rinsed
- 1 8 oz. Pillsbury refrigerated crescent dinner rolls
- 2 tbs. grated Parmesan cheese
- 1 tbs. chopped fresh parsley, if desired
Salmon ala Henry

Spread the lime juice over the salmon in a pan and let sit for 10 minutes
- 4 Portions of fresh Norwegian Salmon
- Juice of 1-2 limes
- Honey Dijon mustard
- 2 1/2 cups of fresh pecans
- 4 tbs. of real maple syrup
- Ceyenne pepper if wanted, to add zip
Banana Nut Muffins

Preheat oven to 400 degrees
- 1 1/2 cups all-purpose flour
- 1 cup chopped walnuts
- 1/2 cup toasted woheat germ
- 1/2 cup brown sugar
- 1 Tbs. baking powder
- 1 tsp. cinnamon
- 1/2 tsp. salt
- 1/4 tsp. ground nutmeg
- 2 ripe bananas, mashed
- 3/4 cus milk
- 5 Tbs. melted butter
- 1 egg
- Cinnamon sugar optional
Pork Chops ala Noilly

Place chops in buttered, oven proof casserole dish
- 4 large pork chops (thick, butterfly chops or pork tenderloin. Cut up into 1" slices).
- 1 tsp. sage
- salt and pepper
- 4 tbs. ketchup
- 4 large Spanish onions or sweet white onion (sliced)
- Worcestershire sauce dry mustard
- Paprika
- 5 ozs. Vermouth or dry white wine
Corn Bread

Spoon ingredients into shallow, buttered pan, (8" square) for thick bread, layer for thin
- Sift together:
- 3/4 cup of cornmeal
- 1 cup of flour
- 1/3 cup of sugar
- 3 tsp. baking powder
- 3/4 tsp. salt
- Mix in:
- 1 cup of milk
- 2 eggs, well beaten
- 2 tbs. melted shortening or oil
Spare Rib Baked Sauce

In a 4 qt. saucepan, blend and bring to a boil
- 2 cups catsup
- 2 cups chili sauce
- 1 cup coarse chopped onion
- 1/2 cup white vinegar
- 1/4 cup honey
- 1/4 cup lemon juice
- 1/4 cup dark brown sugar
- 2 tbs. lime juice
- 2 tbs. worcestershire sauce
- 2 tbs. minced garlic (6 cloves)
- 1 tbs. soy sauce
- 1/2 tsp. dry mustard
Butter Shortbread

Cream the butter and sugar together until light and fluffy
- 3/4 cup butter
- 1/4 cup sugar
- 1 1/2 cups all-purpose flour
