- Marinade:
- 1/2 cup soy sauce
- 1/2 cup olive oil
- Juice of 3 lemons
- 1/2 cup honey
- 1 cup finely chopped onion
- 1 jalepeno chili, seeded and chopped
- Salt and freshly ground black pepper
- 2-pound skirt steak
- Mango Salsa:
- 1 red onion, finely chopped
- 1 large, ripe mango, peeled and finely chopped
- 1/4 cup chopped cilantro leaves
- 1 poblano chili, seeded and minced
- 1/4 cup honey
- Juice of 3 limes
- Salt and freshly ground black pepper
- Other ingredients:
- 1 16-ounce can black beans, drained
- 1/2 cup olive oil
- 1/2 cup red wine
- 1 jalapeño pepper, seeded and chopped
- Vegetable oil, for frying
- 6 corn tortillas or tostada shells
- Mango Salsa, recipe above
- Sour cream, optional
- Grated cheese of your choice, optional
Pumpkin Cupcakes

Cupcakes: 1. Heat oven to 350
- Cupcakes:
- 3 c flour
- 1 T pumpkin pie spice
- 2 1/2 t baking soda
- 1 t baking powder
- 3/4 t salt
- 1 1/2 c sugar
- 3/4 c vegetable oil
- 1/2 c buttermilk
- 1 can (15 oz) pumpkin puree
- 4 eggs
- Frosting:
- 8 oz cream cheese, softened
- 3/4 c (1 1/2 sticks) unsalted butter, softened
- 1 box (16 oz) confectioners' sugar
- 1 t vanilla extract
- 2 T milk, plus more if needed
- orange food coloring
- fine and coarse orange decorating sugar
- pretzel sticks or rods
Valentine's Day Cider

Using a vegetable peeler or sharp knife, cut the orange peel
- 4-3 " long strips of orange peel
- Juice of 2 oranges, strained
- 2 qt cranberry juice
- 4 cinnamon sticks
- 2-2 " long pieces of peeled ginger

Strawberry Cream Puffs

- Pastry Shells:
- 1 c water
- 1/2 c butter
- 1 1/4 c KA unbleached all-purpose flour
- 4 large eggs
- Pastry Cream:
- 3 c whole milk
- 1/2 c sugar
- 1/4 tsp salt
- 2 tsp vanilla extract
- 1/4 c cornstarch
- 1 T KA unbleached all-purpose flour
- 4 large egg yolks
- 1/4 c butter
- 1 c heavy cream, whipped to soft peaks
- Strawberry Sauce:
- 1 pint fresh or frozen strawberries
- 1 c sugar
- 1/4 c orange juice
- Whipped Cream:
- 1 pint heavy or whipping cream
- 1/4 c sugar, or to taste
- 1 tsp vanilla extract
- Pint of strawberries sliced for serving
Balsamic Vinaigrette

Mix together
- 1/3 c olive oil
- 2 T balsamic vinegar
- 1/8 t sugar
- 1/4 t salt
- 1/8 t ground black pepper
Salmon Cakes with Cilantro Cream Sauce

1. Mix all ingredients together in a large bowl
- Sauce:
- 2 cans salmon, drained and liquid reserved
- 1/2 white onion, grated
- 2 eggs
- 1 c seasoned bread crumbs
- dash of ground pepper
- dash of hot sauce
- Old Bay Seasoning
- salt to taste
- 2 T olive oil
- 1 bunch cilantro
- 1 c sour cream
- juice of 1 lime
- zest from 2 limes
- salt and pepper to taste
Egg Rolls

1. In wok, saute chopped garlic in 1 T oil 2
- 2 lbs ground pork
- 2 c grated carrots
- 2 1/2 c bean sprouts
- 1/2 c cilantro
- 3 garlic cloves
- 3/4 c oyster flavored sauce (Panda Brand)
- 1/8 c soy sauce
- 1 bunch green onions, chopped
- 3 T sugar
- 2 packages 8x8" spring roll wraps or egg roll wraps
- Mae Ploy Sweet Chili Sauce for serving
Chicken Salad Sandwiches

Recipe from Panera Bread
- 1 rotisserie chicken, about 2 1/4 pounds
- 3/4 cup mayonnaise
- 3/4 cup finely chopped celery
- 2 tablespoons dill pickle relish
- 1 tablespoon chopped fresh tarragon (or 1 tsp dried)
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 12 thin slices of Panera Bread Country loaf
- 6 leaves romaine lettuce, torn
Sugar Cookie Glaze

Mom's Meaty spaghetti Sauce
- 2 lbs. Ground Beef
- 1 medium onion (1/2 cup) diced
- 1/2 green pepper diced
- 2 16 oz. cans tomato sauce
- 2 12 oz. cans tomato paste with Italian Seasoning
- 3 1/2 oz. can sliced olives
- 2 envelopes Italian Style Spaghetti Sauce (Lowy's or McCormic)
- 3 cups water
- 2 T. Sugar
- 1/2 t. oregano
- 2 cloves garlic
- 1 bay leaf
