Potato Salad

Mix together and refrigerate
- 6 potatoes, boiled and cubed
- 7 eggs, boiled and cubed
- 1 T onion, diced
- 4 heaping spoonfuls Miracle Whip
- 2 T mayonaise
- 1 1/2 T mustard
- 2 t celery seed
- 1 T salt
- 2 t pepper
- 1/2 c celery, diced
- 1/4 c sweet pickles, diced
- 1 T pickle juice
Mustard-Rosemary Chicken with Carrots and Potatoes

1. Preheat oven to 425. Toss together carrots, 1 t oil, and 1/8 t salt in a bowl
- 12 thin carrots
- 1 T + 1 t extra-virgin olive oil
- 1/4 t coarse salt
- 1/4 cup Dijon mustard
- 4 garlic cloves, minced
- 1 1/2 t chopped fresh rosemary, plus 3 sprigs
- 4 skinless chicken thighs
- 4 skinless chicken drumsticks
- 8 baby Yukon Gold or Red Bliss potatoes (8 oz), halved
- 1 lemon, halved
- Freshly ground peppe
Caramel Apple Cream Cheese Spread

- 8 ounces cream cheese
- caramel sauce (homemade or store-bought from Trader Joe's)
- toffee bits
- sliced apples, pears, pretzels for serving

- Filling:
- 4 c rhubarb (fresh or frozen) sliced into 1" pieces
- 1 c sugar
- 2 T cornstarch
- 1 c water
- 1 stp vanilla extract
- Topping:
- 1 c flour
- 3/4 c oatmeal
- 1 c brown sugar
- 1 stick butter, softened
French Chocolate Pie

- 1/2 c butter, softened
- 3/4 c sugar
- 2 squares Baker's unsweetened chocolate
- 2 eggs
- 2 c Cool Whip (measure out)

1. Place walnuts in medium saute pan; heat on low 5-7 minutes, stirring occasionally, or until toasted
- 2 T chopped walnuts
- 2/3 c Boursin Gournay with Shallots & Chives (about 5 oz)
