Crumb Topped Cranberry Eggnog Muffins

Preheat the oven to 350 degrees
- For the muffins:
- 2 cups flour
- 3/4 cups sugar
- 1 teaspoon baking powder
- 1/2 teaspoon nutmeg
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 egg
- 3/4 cup eggnog
- 1/4 cup vegetable oil
- 1 teaspoon vanilla
- 1 cup fresh cranberries
- For the crumb topping:
- 1/2 cup sugar
- 5 tablespoons flour
- 1/2 teaspoon nutmeg
- 4 tablespoons cold unsalted butter, cut into pieces
Cinnamon-Apple Twist Bread

- Dough
- 3 1/4 cups (13 to 13 3/4 ounces) Mellow Pastry Blend or KingArthur Unbleached All-Purpose Flour
- 1/4 cup (1 1/2 ounces) potato flour OR 1/2 cup dried potato flakes
- 1 heaping tablespoon (1/2 ounce) granular lecithin (optional)
- 3 tablespoons (1 1/4 ounces) sugar
- 1 1/2 teaspoons instant yeast
- 1 1/4 teaspoons salt
- 3 tablespoons (1 1/2 ounces) butter
- 1 teaspoon vanilla OR Sweet Dough Flavor OR Princess Cake Flavor
- 1 large egg
- 1 cup (8 ounces) milk
- Filling
- 1/2 cup (3 3/4 ounces) sugar
- 3 tablespoons (3/4 ounce) Instant ClearJel® powder or unbleached all-purpose flour
- 2 teaspoon cinnamon
- 1 cup peeled, grated apple (1 to 2 large apples, 10 to 12 ounces whole)
- 1 tablespoon lemon juice
- Double the recipe and add more filling to each rolled out piece of dough
- Also good if you add cherry pie filling
- Glaze
- 1 cup (4 ounces) glazing or confectioners' sugar
- 1 teaspoon vanilla
- 1 to 2 tablespoons water OR 2 to 3 tablespoons heavy cream
Cinnamon Sugar Candied Nuts Trail Mix

Preheat oven to 300F. Line a baking sheet with a Silpat or parchment paper
- 3 cups nuts (I used 1 cup each of pecans, cashews, and almonds. All were raw and unsalted)
- 1 egg white from a large egg, whisked to frothy
- 1 tablespoon water
- 1/2 cup granulated sugar
- 1/4 cup brown sugar, packed (light or dark is fine)
- 2 + teaspoons cinnamon (I used 1 tablespoon)
- 1/2 teaspoon salt, optional and to taste
- 1 1/2 cups dried fruit (I used 3/4 cup each dried cranberries and dried cherries)
- 1 1/2 cups baking chips (I used 3/4 cup each semi-sweet chocolate chips and white chocolate chips)

Preheat the oven to 350 degrees F
- Cookies:
- 18 1/2 -ounce package yellow cake mix
- 3 1/2 -ounce package instant lemon pudding mix
- 4 large eggs
- 3/4 cup vegetable oil
- Glaze:
- 4 cups confectioners' sugar
- 1/3 cup fresh lemon juice
- 1 lemon, zested
- 3 tablespoons vegetable oil
- 3 tablespoons water
Chicken Soft Tacos with Spiced Mayo & Avocado Salsa

If using bamboo skewers, soak them in water at least 30 minute before starting
- For the Chicken:
- 1/2 teaspoon grated lime zest
- 1/2 teaspoon ground cumin, divided
- Salt & pepper, to taste
- 4 boneless, skinless chicken breast halves, cut into 1-inch cubes
- 1 large yellow onion, peeled and cut into 3/4-inch pieces (3-layer stacks)
- 1/2 cup mayonnaise
- Juice from 1 lime
- 1 teaspoon hot sauce
- For the Avocado Salsa:
- 2 large avocados, peeled, pitted and diced
- 2 medium Roma tomatoes, seeded and finely diced
- 3 green onions, minced
- 2 tablespoons fresh lime juice
- 1 tablespoon chopped cilantro
- 1/4 teaspoon hot sauce
- Extra virgin olive oil
- 8 flour tortillas

1. Place 3 teaspoons flour and seasoned salt in zip-top bag; shake to mix and set aside
- 4 teaspoons flour, divided
- 1 teaspoon seasoned salt

- juice of 1 lemon
- 1 1/2 pounds tilapia fillets
- 3 tablespoons butter, divided
- 1/4 cup chicken broth
Taco Bowls with Guac-a-Salsa Salad

- 1 sack corn tortilla chips, any brand or color (yellow, blue, red white) will do
- 3 T extra-virgin olive oil, divided
- 1 1/2 pounds ground beef
- 2 jalapeno peppers, seeded and finely chopped
- 2 medium onions, chopped
- 3 to 4 cloves garlic, chopped
- 1 T ground cumin
- 1 T Chili powder
- Course salt black pepper
- 1 cup water
- 2 firm Haas avocados
- 3 plum tomatoes, seeded and chopped
- Handful cilantro leaves, chopped

- l lg. carrot, julienned
- 3 stalked celery chopped
- 2 cloves garlic, minced
- 2 (14.5oz) cans diced tomatoes
- l can red kidney beans (with liquid)
- l can great northern beans (with liquid)
- 46 oz. tomato juice
- 1 TB white vinegar
- 1 1/2 t. salt
- 1 t. oregano
- 1 t. basil
- 1/2 t. black pepper
- 1/2 t. thyme
- 1/2 pkg. ditali pasta
Giant Sugar Cookies with Pink Buttercream

Great sugar cookie recipe for cut cookies
- Cookies:
- 1-1/2 cup butter or 3 sticks
- 2 cups granulated sugar
- 3 eggs
- 4 teaspoons vanilla extract
- 2 teaspoons almond extract (can substitute lemon or vanilla extract or lemon juice & rind from 1 lemon)
- 4 cups all-purpose flour
- 1 teaspoon baking powder
- Cherry Buttercream:
- 3 cups powdered sugar (confectioners sugar)
- 1/2 cup (1 stick) butter
- 1/2 teaspoon almond extract
- 1/4 cup maraschino cherry juice
