Cream Puffs with Lemon Mousse and Blueberry Sauce

CREAM PUFFS: Preheat oven to 400 degrees
- CREAM PUFFS:
- 1 c water
- 1 stick unsalted butter
- 1 t granulated sugar
- 1/2 t salt
- 1 c all-purpose flour
- 5 large eggs, plus 1 large egg lightly beaten with 1 T water, for egg wash
- Coarse sanding sugar, for sprinkling
- BLUEBERRY SAUCE:
- 2 c (1 pint) blueberries
- 1/4 c water
- 1/4 c granulated sugar
- 1 t finely grated lemon zest
- 1/4 t coarse salt
- LEMON MOUSSE:
- 3/4 cup Lemon Curd
- 1/2 cup heavy cream, whipped
- LEMON CURD:
- 1 large egg, plus 3 large egg yolks
- 1/2 cup sugar
- 1 1/2 teaspoons finely grated lemon zest
- 1/4 cup plus 2 tablespoons fresh lemon juice (from 2 lemons)
- Pinch of salt
- 2 ounces (4 tablespoons) unsalted butter, cut into pieces
Fruit Cream Dream

1. Cut cake into bite sized cubes and arrange in half the bottom of a 9"x13" dish
- 1 (10 3/4 oz) angel food cake, frozen (Wal-Mart)
- 14 oz. condensed milk
- 1 c cold water
- 1 t almond extract
- 3-4 c mixed berries
- 1 (4 serving) box instant vanilla pudding
- 2 c (1 pt) Cool Whip
Spiced Apple Bread

In a bowl, combine flour, baking soda, salt, and spices
- 2 2/3 cups flour
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 2 teaspoons cinnamon
- 1/2 teaspoon ground nutmeg
- 1 teaspoon ground cloves
- 2 cups granulated sugar
- 1 cup vegetable oil
- 4 eggs, beaten
- 2 teaspoons vanilla
- 4 cups coarsely chopped apples
- 1 cup raisins (optional)
- 1 cup chopped pecans
- 8 teaspoons sugar mixed with 1 teaspoon cinnamon
Microwave Carmel Corn

- 3 qt popped pop corn
- 1 c light brown sugar
- 1/4 c light corn syrup
- 1/2 t baking soda
- 1 stick butter
- 1/2 t salt
- 1 brown paper bag
Rafferty's Potato Soup

In a large saucepan combine diced potatoes, onion, and salt in 2 cups of water
- 5 Potatoes diced
- 1 chopped onion
- 1 T salt
- 1 8-oz Philadelphia cream cheese (cubed) (fat free)
- 1 can Cream of Mushroom Soup
- 1 can Cream of Celery Soup
- 2 cups Milk
- 2 T margarine
- Salt and Pepper to taste
- Optional: Bacon bits, cheddar cheese.

- 2/3 cup grated Parmesan cheese
- 1/2 cup honey
- 3 Tbsp soy sauce
