Coconut Cream Cheese Frosting

Korinne's recipe Omit coconut for cream cheese frosting
- 8 oz package cream cheese, softened
- 1/2 c unsalted butter, softened
- 4 c confectioners' sugar
- 2 T heavy cream
- 1/2 tsp salt
- 1/2 tsp coconut flavoring
- 1 tsp vanilla extract
- 1/2 c sweetened shredded coconut
- 1 c sweetened shredded coconut, toasted (optional)
Ann's Punch

Mix 1 to 1 to 1 ratio. Add red jello to make it red if you want
- 1 to 1 to 1 mix of the following
- Pineapple Sherbet
- Cherry 7-Up
- pineapple Juice
- Add red jello to make it red if desired
Cinnamon Rolls

Prepare small recipe of roll dough Roll out dough
- Filling:
- 1 c packed light brown sugar
- 2 1/2 T cinnamon
- 1/3 c butter, softened
- Icing:
- 1 stick butter, softened
- 1 1/2 c powdered sugar
- 1/4 c (2 oz) cream cheese
- 1/2 t vanilla extract
- 1/8 t salt
Compost Cookies

1. Preheat oven to 350 degrees
- 1 cup butter
- 1 cup brown sugar
- 3/4 cup granulated sugar
- 1 teaspoon vanilla
- 2 egg yolks
- 1 tablespoon milk
- 1 3/4 cup all purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 1/2 cups chocolate chips
- 1 1/2 cups crushed pretzels
- 1/2 cup graham cracker crumbs
- 1/2 cup oats
Honey Lime Chicken Enchiladas

1. Mix the first four ingredients and toss with shredded chicken
- 6 T honey
- 5 T lime juice
- 1 T chili powder (use about 1/2)
- 1/2 t garlic powder
- 1 lb chicken, cooked and shredded
- 10 flour tortillas
- 1 lb Monterey jack cheese, shredded
- 2 small cans green enchilada sauce
- 1 c light sour cream (use less)
Corn Chowder

1. Cook bacon in a 6-8 quart heavy pot over moderate heat, stirring frequently, until crisp, about 5 minutes
- 1/2 c diced bacon
- 2 c diced sweet onion
- 2 large carrots, cut into 1/4" dice (1 cup)
- 1 celery rib, cut into 1/4" dice (3/4 cup)
- 1 red bell pepper, cut into 1/4" dice (1 cup)
- 2 small Yukon Gold potato, peeled and cut into 1/4" dice
- 1 medium sweet potato, peeled and cut into 1/4" dice
- 5 c reduced-sodium chicken broth (40 oz)
- 2 fresh thyme sprigs
- 2 c corn (6 ears)
- 1 1/2 c heavy cream
- 2 t fine sea salt
- 1 t black pepper
- 4 T corn starch dissolved in a little extra chicken broth
Pork Loin with Spiced-Cider Glaze

Preheat oven to 375. In a saucepan over high heat, combine the apple cider and mulling spices
- 3 c apple cider
- 1 1/2 T Mulling Spices in a tea infuser
- 1 1/4 t Dijon mustard
- 1 t chopped fresh thyme
- 2 lb boneless pork loin
- salt and pepper to taste
- 1 1/2 T olive oil
- 1 c heavy cream
JELL-O Jigglers

1. Stir boiling water into gelatin mixes 3 minutes, or until completely dissolved
- 2 1/2 c boiling water (do not add cold water)
- 4 pkg (3 oz each) JELL-O
Raspberry Poppy Seed Dressing

Blend all but oil and raspberries
- 1 1/2 c sugar
- 2 t dijon mustard
- 2 t salt
- 3 T chopped red onion
- 2/3 c apple cider vinegar
- 2 c vegetable oil
- 3 T poppy seeds
- 2 T frozen raspberries
Raspberry Vinaigrette

- 3 T olive oil
- 1 T raspberry vinegar
- 1 t minced shallot
- 1/4 t raspberry jam
- 1/4 t salt
- 1/8 t pepper
