  • 1 (7 oz.) can chipotle peppers in adobo sauce
  • 1 red onion, coarsely chopped
  • 6 cloves garlic
  • 2 tsp. cumin
  • 2 tsp. dried oregano
  • Salt and freshly ground black pepper
  • 1/2 c. canola oil, divided
  • 10 lbs. boneless, skinless chicken tenderloin

  • 2 tablespoons extra-virgin olive oil
