CHIPOTLE CHICKEN {COPYCAT RECIPE}

Makes enough marinade for 10 pounds of chicken
- 1 (2 oz.) package dried ancho chiles, soaked at least 12 hours or 1/4 c ancho chile powder
- 1 (7 oz.) can chipotle peppers in adobo sauce
- 1 red onion, coarsely chopped
- 6 cloves garlic
- 2 tsp. cumin
- 2 tsp. dried oregano
- Salt and freshly ground black pepper
- 1/2 c. canola oil, divided
- 10 lbs. boneless, skinless chicken tenderloin
Orange Teriyaki Chicken Kebabs

adapted from Barbara Bakes (originally adapted from On A Stick)
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon ginger, finely grated or 1 tsp ginger powder
- 1 tablespoon orange zest
- 1 garlic clove, minced
- 1/4 cup rice vinegar
- 3 tablespoons soy sauce
- 2 tablespoons sugar
- 2 tablespoons orange marmalade
- 1 tablespoon freshly squeezed orange juice
- 1 tablespoon honey
- pinch of red pepper flakes, optional
- 1 1/4 lb boneless, skinless chicken thighs or chicken breast, trimmed and cut into 1-inch cubes (2 large breasts make 4 skewers)

- Pumpkin Whipped Cream:
- 1 box yellow cake mix
- 8 T. (1 stick) unsalted butter, melted, plus 4 T. (1/2 stick)
- cold unsalted
- 3 eggs
- 1 jar Muirhead Pecan Pumpkin Butter
- 2 T. milk
- 1 T. all-purpose flour
- 1/4 cup (60 g) sugar
- 1 t. ground cinnamon
- 1 c heavy whipping cream
- 1/4 c powdered sugar
- 1 t vanilla extract
- 1 T Muirhead Pecan Pumpkin Butter
Caramel Crunch

In very large heatproof bowl, combine popcorn, cereal & almonds
- 9 c popped popcorn
- 9 c Crispix cereal
- 1 c slivered almonds
- 1 c butter
- 1/2 c light corn syrup
- 2 c brown sugar
- 1/2 t baking soda
Chocolate Pots de Creme

- 3 ounces bittersweet chocolate, chopped
- 4 cups heavy cream
- 1/8 tablespoon salt
- 6 yolks
- 1/2 cup plus 1/2 tablespoon sugar
- 1/2 cup heavy cream
- 1/4 tablespoons freshly grated orange rind

- 8 oz cream cheese, softened
- small can chopped green chilies
- small can chopped black olives

Cinnamon rolls from King Arthur Flour
- Dough
- 1 cup (8 ounces) lukewarm milk
- 2 large eggs, room temperature
- 1/3 cup (2 5/8 ounces) unsalted butter, cut up
- 4 3/4 cups (20 ounces) Mellow Pastry Blend OR 4 1/2 cups (19 1/2 ounces) King Arthur Unbleached All-Purpose Flour
- 4 T easy roll dough improver
- 1 3/4 teaspoons salt
- 1/2 cup (3 1/2 ounces) sugar
- 2 1/2 teaspoons instant yeast
- Filling
- 1/3 cup (2 5/8 ounces) unsalted butter, softened
- 1 cup (7 1/4 ounces) brown sugar, packed
- 3 tablespoons (3/4 ounce) ground cinnamon
- Icing
- one 3-ounce package cream cheese, softened
- 1/4 cup (2 ounces) unsalted butter, softened
- 1 1/2 cups (6 ounces) glazing or confectioners’ sugar
- 1/2 teaspoon vanilla extract
Grilled Pork Tenderloin

from King Arthur Flour good with rice and black bean and corn salad
- 1 tablespoon olive oil
- 1 clove garlic, peeled and minced
- 1 teaspoon salt
- 1 teaspoon chili powder or ground cumin
- 1 teaspoon coarsely ground black pepper
- 1/2 pound pork tenderloin*
- Grilled or sautéed boneless pork chops, or leftover pork roast, may be substituted for the pork tenderloin.
Zucchini Cake

Spray cake pan and preheat oven to 350
- 3 c grated zucchini (2 1/2 medium to large zucchinis)
- 3 c sugar
- 3 c flour
- 1 t baking soda
- 2 t baking powder
- 1/2 t salt
- 3 t cinnamon
- 1 1/2 t cloves
- 1 1/2 t nutmeg
- 1 c chopped nuts (optional)
- 4 eggs
- 1 1/2 c vegetable oil
