Italian Mayonnaise

Use in focaccia sandwiches with turkey, Swiss cheese and lettuce
- 1 c mayonnaise
- 1 packet Good Seasons Italian Dressing
- 4 T red wine vinegar
Country Apple Fritter Bread

1. Preheat oven to 350 degrees
- Bread:
- 1/3 c light brown sugar
- 1 heaping tsp ground cinnamon
- 2/3 c white sugar
- 1/2 c butter, softened
- 2 eggs
- 1 1/2 tsp vanilla extract
- 1 1/2 c all-purpose flour
- 1 3/4 tsp baking powder
- 1/2 c milk
- 2 apples, peeled and chopped (any kind), mixed with 2 T granulated sugar and 1 heaping tsp cinnamon
- I used 1 large apple
- Can also add walnuts or pecans
- Old-Fashioned Creme Glaze:
- 1/2 c powdered sugar
- 2-3 T milk or cream

- 2 cups all-purpose flour
- 2 cups graham cracker crumbs (about 16 graham crackers)
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 16 tablespoons (2 sticks) unsalted butter, at room temperature
- 1 1/2 cups packed light brown sugar
- 2 large eggs, beaten
- 2 cups marshmallow topping (such as Marshmallow Fluff)
- 2 cups milk-chocolate chips
Citrus Punch

Mix well
- 46 oz. unsweetened pineapple juice
- 1/2 quart Orange juice
- 4 oz. lime juice
- 4 oz. lemon juice
- 1 quart club soda
- 1 quart ginger ale
- 1 cup sugar
Sauteed Squash Ribbons

1. Cut zucchini and squash thinly, using vegetable peeler, down length of squash until reaching seeds
- 1 –2 medium zucchini
- 2 –3 medium yellow squash
- 1 tablespoon butter
- 1/2 teaspoon minced garlic
- 1/2 teaspoon kosher salt
- 1/8 teaspoon pepper
Monkey Bread (Best Ever)

Right before going to bed, or 10 pm, sprinkle pecans or walnuts into a greased Bundt pan, (I use Pam cooking spray)...
- 24 Frozen Rhodes Rolls (dinner rolls)
- 1 cup brown sugar
- 1 box butterscotch cook & serve dry pudding mix not instant
- 1/4 cup sugar
- 1 tsp cinnamon
- 1 stick butter, (not margerine)
- pecans or walnuts, chopped, optional
Italian Balsamic Pork

In a gallon ziplock bag combine dressing, balsamic vinegar and olive oil
- 1 packet Hidden Valley Italian Dressing
- A drizzle of balsamic vinegar
- 1 T olive oil
- 1-2 lbs. pork tenderloin
- apricot preserves for serving
Zucchini Bread

Mix together first 5 ingredients
- 3/4 c vegetable oil
- 2 eggs
- 1 3/4 c sugar
- 3 t vanilla
- 2 T orange peel
- 2 c shredded zucchini
- 3 c flour
- 1 t salt
- 1/4 t baking powder
- 1 t baking soda
- 1 t cinnamon
- 1 t cloves
- 1 t nutmeg
- 1 c walnuts

Preheat the oven to 375 degrees F
- 1/4 cup good olive oil
- 1 cup chopped yellow onion
- 3 scallions, white and green parts, chopped
- 2 (10-ounce) packages frozen chopped spinach, defrosted
- 4 extra-large eggs, lightly beaten
- 3 tablespoons freshly grated Parmesan cheese
- Plain dry bread crumbs
- 1 teaspoon grated nutmeg
- 2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
- 2 cups small-diced feta cheese (12 ounces)
- 3 tablespoons toasted pine nuts
- 24 sheets frozen phyllo dough, defrosted
- 1/4 pound (1 stick) unsalted butter, melted
- Flaked sea salt, such as Maldon, for sprinkling
