Roasted carrots with feta

Preheat oven to 425. Toss carrots with oil on rimmed baking sheet
- 3 lbs carrots, cut 1/2 inch on bias
- 3 tbs olive oil
- Salt and pepper
- 1/3 cup crumbled feta cheese
- 2 tbsp chopped flat parsley
Hush Puppies

Whisk together cornmeal, flour, sugar, baking powder, baking soda, 1 tsp salt, and cayenne
- 1 cup yellow cornmeal
- 1/2 cup flour
- 1 tsp sugar
- 1 tsp baking powder
- 1 tsp baking soda
- salt
- 1/4 tsp cayenne
- 1 egg
- 1 cup buttermilk
- 3 tbsp grated onion with juice
- vegetable oil for frying (2 quarts)
Baileys buttercream frosting

Cream butter and pinch of salt until fluffy on medium speed, 2-3 minutes
- 2 sticks butter, room temp
- 5 cups powdered sugar
- 1 tsp vanilla
- 1/2 cup Baileys

Baked ziti and garlic bread

Preheat oven to 450 degrees
- for ziti:
- salt and pepper
- 8 oz ziti
- 1 cup ricotta
- 1 egg, beaten
- 3/4 cup grated parmesan
- 1 cup shredded mozzarella
- 1 jar (24 oz) tomato sauce
- for garlic bread:
- 1/2 loaf italian bread
- 2 tbsp melted butter
- 2 garlic cloves, minced
Chess tart

Preheat oven to 350. Make shell: coat a 9 inch fluted tart pan with a removable bottom with cooking spray
- Shell:
- Nonstick spray
- 1 1/4 cups vanilla wafers, ground
- 5 tbsp butter, melted and cooled
- 2 tbsp sugar
- 1/4 tsp salt
- Filling:
- 1 cup sugar
- 1/2 cup brown sugar
- 1 tbsp cornmeal
- 1/4 tsp salt
- 3 eggs plus 1 yolk
- 1/2 tsp vanilla
- 1 stick butter, melted and cooled

- 3 egg yolks, room temp
- 1.8 tsp cream of tartar
- 5.5 oz bittersweet chocolate, melted
- 2/3 cup milk
- 1 tbsp plus 1 tsp cornstarch
- pinch salt
- 3 tbsp creme fraiche
- garnish: powdered sugar
