Sweet Chili-Lime Noodles with Vegetables

Place a noodle ingredients in a medium-size microwave-safe plastic container
- 1 cup cooked spaghetti (2 oz uncooked)
- 2 Cups shredded bok choy (or shredded coleslaw mix or shredded cabbage)
- 1/4 cup grated carrot
- 1/4 cup fresh snow peas
- Sweet Chili-Lime Sauce
- SWEET CHILE LIME SAUCE
- 2 Tbsp. bottle sweet chili sauce
- 2 tea. lime juice
- 1/2 tea. fresh grated ginger
- 1/45 tea. minced garlic
Watermelon and Blueberry Salad

Bring sugar and water to a simmer in a saucepan
- 1/4 cup sugar
- 1/4 cup water
- 3 mint sprigs
- zest and juice of 1 lemon
- pinch of salt
- 2 cups blueberries
- 3 cups cubed watermelon
- additional mint for garnish

- 3 lb. boneless pork loin roast
- 2 tea. chilli powder

In a large nonstick skillet, brown the beef and onion, drain
- 1 1/2 lb. ground beef
- 1 onion, chopped
- 1 can (15 oz) enchilada sauce
- 1 can (14 1/2 oz) diced tomatoes (with juice)
- 1 can (2 1/4 oz) sliced ripe olives, drained
- 1 tea. salt
- 1/4 tea. garlic powder
- 1/4 tea. pepper
- 1 cup small-curd cottage cheese
- 1 egg
- 1/2 lb. Monterey Jack cheese, thinly sliced
- 8 corn tortillas (8"), halved
- 1/2 cup shredded cheddar cheese (2 oz)
Lima Beans with Red Wine Vinaigrette

Place beans in a large pot
- 1 lb. dried lima beans
- 2 celery stalks, cut into 2" pieces
- 1 carrot, peeled, cut into 2" pieces
- 1 small onion, cut into large wedges with some root end attached
- 1/4 cup olive oil
- 1 1/2 Tbsp. red wine vinegar
- salt and pepper
- 1/4 cup chopped flat-leaf parsley
- 2 Tbsp. chopped fresh mint
- 1 Tbsp. minced fresh chives

- 1/2 cup butter, cubed
- 1 Tbsp. dried minced onion
- 2 cups uncooked instant rice
- 1 pkg. (16 oz) frozen chopped broccoli, thawed
- 1 can condensed cream of mushroom soup, undiluted
- 1 jar (8 oz) process cheese sauce
