1. Preheat oven to 350°. 2
- 1 teaspoon sugar
- 1 teaspoon garlic powder
- 3/4 teaspoon salt
- 1/2 teaspoon freshly ground allspice
- 1/2 teaspoon ground cumin
- 1/4 teaspoon dried thyme
- 1/4 teaspoon freshly ground nutmeg
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon ground red pepper
- 1 (1-pound) pork tenderloin, trimmed
- 2 teaspoons olive oil
Mini Caprese Salad

In a large glass bowl, combine mozzarella, tomatoes and basil
- 16 oz. fresh mini mozzarella balls
- 1 lb. cherry tomatoes
- 1/2 cup shredded fresh basil leaves
- 1 cup olive oil
- 6 Tbsp. white balsamic vinegar
- 2 tea. red pepper flakes
- 2 tea. garlic salt
- 1 tea. dried oregano
Pork Adobo

Trim excess fat from pork and cut into 1" cubes
- 1 (1 1/4 lb) boneless pork shoulder roast
- 3 Tbsp. apple cider vinegar
- 3 Tbsp. soy sauce
- 1/2 cup water
- 3 garlic cloves, minced
- 1 jalapeno, minced
- 1/8 tea. crushed red pepper flakes
- 1 cup long grain rice
Sour Cream Muffins w/ Popy Seed Streusel

- 3 Tbsp. sugar
- 2 Tbsp. flour
- 1 Tbsp. butter, melted
- 1 tea. poppy seeds
- MUFFINS
- 2 cups flour
- 3/4 cup sugar
- 2 tea. baking powder
- 1 tea. baking soda
- 1/2 tea salt
- 3/4 cup buttermilk
- 1/4 cup butter, melted
- 1 Tbsp. grated orange rind
- 1 tea. vanilla
- 1 egg, lightly beaten
- 1 (8 oz) container sour cream

Beef Marinade for Kebobs, Steaks

- 2 Tbsp. Dijon mustard
- 2 Tbsp. balsamic vinegar
- 1 Tbsp. brown sugar
- 1 Tbsp. olive oil
- 1 Tbsp. minced fresh rosemary
- 1 1/2 tea. minced fresh thyme
- 2 garlic cloves, minced
- 1/2 tea. salt
- 1/2 tea. pepper
- 1 1/2 lb. boneless beef sirloin steak, cut into 1 1/2" cubes

- 1/2 cup bourbon
- 3/4 cup brown sugar
- 3 tea. soy sauce
- 1/2 tea. ground ginger
- 1/2 tea. pepper
- 4 6-8 oz. portions skinless salmon fillets
Green Chile Corn and Potato Chowder

Saute diced onion and bacon pieces over medium high heat with butter
- Thickening agent:
- 3 slices crisp bacon, chopped
- 4 cups frozen or fresh corn kernels
- 1 medium onion, chopped
- 1 large potato (peeled, chopped, and fast-boiled in water for approx. 4 minutes. Drain.)
- 2 Tbsp. butter
- 2 4-oz. cans diced green chiles, drained
- 32 oz. chicken broth
- 1 1/2 cups half and half, heavy cream or whole milk
- 3 Tbsp. cornmeal dissolved in 1/4 cup water
Sweet Potatoes - Holiday Yam Casserole

- 1/2 cup flour
- 1/2 cup firmly packed brown sugar
- 1/2 cup regular oats, uncooked
- 1 tea. cinnamon
- 1/3 cup butter
- 2 (17 oz) cans yams
- 2 cups fresh cranberries
Crown Roast of Pork with Cranberry Stuffing

Preheat oven to 350 degrees
- SPICE RUB
- 1 Tbsp. garlic salt
- 1 Tbsp., poultry seasoning
- 1 Tbsp. dried thyme leaves
- 2 tea. cinnamon
- 2 tea. pepper
- 1 1/2 tea. paprika
- 1/4 tea. ground cloves
- STUFFING AND PORK
- 1/4 cup corn oil
- 1/4 cup butter
- 1 1/2 cups chopped celery
- 1 cup chopped onion
- 1/2 cup dried cranberries
- 12 cup chopped dried apricots
- 5 cups cubed firm white bread, dried (about 6 slices)
- 1 cup chicken broth
- 12-16 bone tied crown pork roast (about 8 lbs)
Roasted Olives

- 1 cup each any 3 types of Lindsay Olives, drained (black, green, stuffed, klamata, etc.)
- 1 pint cherry tomatoes
- 1 Tbsp. Herbes de Provence (or mixed rosemary, thyme and basil)
- 8 whole cloves garlic
- 1/4 cup olive oil
- 1/4 tea. black pepper
