Peanut-Noodle Salad

Peel cucumbers; cut in half lengthwise, removing and discarding seeds
- 2 large cucumbers
- 1 cup soy sauce
- 1/2 cup coconut milk
- 1/2 cup rice wine vinegar
- 1/2 cup chunky peanut butter
- 4 garlic cloves, minced
- 1 tea. sesame oil
- 1/2 to 1 tea. dried crushed red pepper
- 1/2 tea. salt
- 1 (16 oz) package soba noodles or angel hair pasta, cooked
- 1 (8 oz) package shredded fresh carrot
- 6 green onions, diagonally cut into 1 1/2" pieces
Crunchy Dijon Chicken and Gravy

Spread the mustard on the chicken
- 2 Tbsp. Dijon mustard
- 1 1/4 lb. skinless, boneless chicken breast halves
- 1 cup Pepperidge Farm Herb Seasoned Stuffing, crushed
- 2 Tbsp. olive oil or vegetable oil
- 1 jar (12 oz) Campbell's Slow Roast chicken Gravy
- 1 cup regular long-grain rick, prepared according to package directions (about 3 cups)
BBQ Sauce Base with variations

Sweet: Base + 1/4 cup honey + 2 tea
- 2 cups ketchup
- 1/2 cup brown sugar
- 1 bottle of your favorite beer
- 2 Tbsp. red wine vinegar
- 2 Tbsp. steak sauce
- 1 Tbsp. Dijon mustard
- 1 Tbsp. Worcestershire
- 1/2 tea. liquid smoke
- 1/2 tea. lemon juice
- 1/2 tea. black pepper
- 1/2 tea. hot sauce (suggests Tabasco)
Salsa - Orange & Jicama Salsa

In a large bowl, combine oranges, vegetables,cilantro, lime juice, jalapeno,sugar and salt
- 6 med. oranges, peeled, sectioned and chopped
- 1 1/2 cups cubed peeled jicama
- 1/4 cup chopped red onion
- 1/4 cup chopped sweet red pepper
- 2 green onions, thinly sliced
- 1/4 cup minced fresh cilantro
- 1 Tbsp. lime juice
- 2 tea. chopped seeded jalapeno
- 1/2 tea. sugar
- 1/8 tea. salt
Grilled Corn and Tomato Salsa

Remove corn silk, lightly brush corn with oil
- 8 ears corn, husks removed
- vegetable oil
- 1/2 cup lime juice
- 1 tea. cumin
- 1/2 tea. cayenne
- 2 tea. salt
- 1 clove minced garlic
- 1 1/2 cups diced sweet onion
- 2 jalapenos, minced
- 4 cups diced tomatoes
- 1 (15 oz) can black beans, rinsed and drained
- 1 cxup chopped cilantro
Pumpkin Carrot Cake with Orange Cream Cheese Frosting

Heat oven to 325 degrees. Spray a 9x13 baking pan with cooking spray
- CAKE:
- 2 cups flour
- 1 cup sugar
- 2 tea. baking soda
- 1 tea. cinnamon
- 1/2 tea. salt
- 3/4 cup canola oil
- 4 eggs
- 1 cup canned unsweetened pumpkin
- 3 large carrots, peeled and garted (about 3 cups)
- 1 cup chopped pecans
- 1/2 cup raisins (or dried cranberries)
- FROSTING:
- 1 pkg. (3 oz) cream cheese, softened
- 2 Rbsp. butter, softened
- 2 Tbsp. orange juice
- 1 Tbsp. orange zest
- 3 cups sifted confectioners' sugar
Fruit Pie Meets Crumb Cake

Heat oven to375 degrees. Coat 9" springform pan with removable bottom with cooking spray
- 1 1/4 cups (2 1/2 sticks) butter, diced
- 3 cups flour
- 1 cup finely ground almonds
- 1 1/3 cups firmly packed brown sugar
- 1 Tbsp. cinnamon
- 1 tea. salt
- 2 cans (16 oz each) dark sweet pitted cherries in heavy syrup
- 3 Tbsp. cornstarch
- 1/2 tea. almond extract
- 1 Tbsp. confectioners' sugar
Olive Caprese Salad

In a small saucepan, combine 1 cup vinegar, sugar and star anise
- 1 cup plus 2 Tbsp. red wine vinegar, divided
- 1/2 cup sugar
- 1 whole star anise
- 3/4 cup thinly sliced red onion 9about 1/2 medium)
- 2 lb. medium heirloom tomatoes, cut into wedges
- 1 cup pitted green olives, halved
- 8 oz. fresh mozzarella cheese, sliced and halved
- 1 Tbsp. each minced fresh basil, tarragon, mint and cilantro
- 1 serrano pepper, thinly sliced
- 1/4 cup olive oil
- 2 Tbsp. lime juice
- 1 1/2 tea. grated lime peel
- 1/4 tea. salt
Jalapeno Gravy

Bring cream to slight boil
- 2 cups cream
- 2 Tbsp. butter
- 2 tea. salt
- 1 tea. granulated garlic
- 2 chicken bouillon cubes
- 2 tea. pepper
- 4 fresh jalapenos, sliced
- cornstarch slurry to thicken
Pork Roast - Maple Glazed

With a paring knife, pierce the pork all over
- 1 lb. boneless lean pork shoulder butt
- 2 cloves garlic, thinly sliced
- 2 Tbsp. lime juice
- 1 Tbsp. dark rum
- 1 1/2 tea. maple syrup
- 1/8 tea. cayenne
