Spicy Bean Salad with Chicken and Chipotle

Whisk together the mayonnaise, chipotle chili and 3 tablespoons lime juice
- 1/2 cup mayonnaise
- 1 tea. canned chipotle chili in adobo sauce
- 4 Tbsp. fresh lime juice, divided
- 1 can (15 oz) black beans
- 1 can (15 oz) pinto beans
- 1 cup fresh or frozen corn kernels
- 3/4 cup diced roasted red bell pepper, jarred or fresh
- 2 green onions, finely chopped
- 1 cup cooked, diced chicken
- 1 avocado, peeled, pitted and diced
- 3 Tbsp. finely chopped cilantro
Celery Salad with Feta and Mint

In a large bowl, combine celery and onion
- 6 large celery stalks, cut into 1/2" slices
- 1/4 small red onion, thinly sliced
- 2 Tbsp. extra-virgin olive oil
- 2 Tbsp. lemon zest
- 2 TGb sp. lemon juice
- salt and pepper
- 1/3 cup feta, crumbled
- 3 Gbsp. mthinly sliced resh mint leaves
Pork Tenderloin - Stuffed

Cut a lengthwise slit down the center of each tenderloin to within 1/2" of bottom
- 2 pork tenderloins (3/4 lb. each)
- 3/4 cup dry red wine or beef broth
- 1/3 cup packed brown sugar
- 1/4 cup ketchup
- 2 Tbsp. soy sauce
- 2 garlic cloves, minced
- 1/2 tea. minced fresh ginger
- 1/45 tea,. pepper
- 1 1/4 cups water
- 2 Tbsp. butter
- 1 pkg (6 oz) stuffing mix
Peanut Butter Ramen

Remove seasoning packet and discard
- 2 (3 oz) pkgs. ramen noodles, any flavor
- 1 Tbsp. creamy peanut butter
- 3 Tbsp. soy sauce
- 2 Tbsp. sesame oil
- Options? Sweet Chile Sauce
- Garlic
- Shredded Chicken
Popeye's style Cole Slaw Dressing

Mix dressing ingredients in a large bowl
- 2 Tbsp. sugar
- 1/4 tea. pepper
- 1 tea. salt
- 1/4 cup sweet pickle juice
- 1/4 cup white vinegar
- 1 large dill pickle minced (about 2 Tbsp.)
- 1 cup mayonnaise
- 1 1/2 lbs. from a 2 lb. package of pre-shredded coleslaw mix
Dried Beef Gravy and Egg Biscuits

Melt butter in a skillet; add beef and onion
- 4 Tbsp. butter
- 1/4 lb. thinly sliced smoked dried beef, cut into strips
- 1/4 cup finely chopped onion
- 3 Tbsp. flour
- 1/4 tea. celery salt
- 1/4 tea. black pepper
- 2 cups milk
- 1 4-oz. can chopped green chilies
- few drops Tabascoor hot sauce, optional
- Red pepper flakes, optional
- 8 buttermilk biscuits
Mozzarella - Marinated

In a large zip-lock combine the oil, tomatoes, parsley and seasonings; add cheese cubes
- 1/3 cup olive oil
- 1 Tbsp. chopped oil-packed sun-dried tomatoes
- 1 Tbsp. minced fresh parsley
- 1 ea. crushed red pepper flakes
- 1 tea. dried basil
- 1 tea. minced chives
- 1/4 tea. garlic powder
- 1 lb. cubed mozzarella cheese
Salmon - with Pepper Jelly

Preheat and oil the grill
- 2 lbs. King salmon
- 1 tea. fresh dill,chopped
- 1 tea. Creole seasoning
- salt and pepper
- 1 medium onion, thinly sliced
- 1 lemon, thinly sliced

Bread Pudding - with Cinnamon Rolls and Kahula

Place pieces of cinnamon roll in large bowl
- 1 cup Kahula Vanilla Coffee Liqueur
- 1 lb. 2 oz. cinnamon rolls cut into 1 1/2" pieces (8 cups)
- 2 3/4 cups Half and Half
- 3 eggs
- 1 cup sugar
- 2 Tbsp. melted butter
- SAUCE
- 3 Tbsp. Kahula
- 1/2 cup (1 stick) butter
- 1/2 cup sugar
- 1/3 cup brown sugar
- 1/16 tea. salt
- 1 egg
Refrigeratort Dill Pickles (like Archies)

- Put in each jar:
- 6-7 unpeeled pickling cucumbers, sliced lengthwise into fourths
- 3 cups water
- 1 1/2 cups white vinegar
- 1/4 cup canning salt
- 1/4 cup sugar
- 2 garlic cloves
- 1/2 of a small onion, sliced
- 1/2 Tbsp. dill weed
- 1/2 Tbsp. pickling spice
- 1/4 tea. red pepper flakes
