Watermelon Rind Pickles

Prepare watermelon rind: trim dark skin and pink flesh from thick watermelon rind
- 4 quarts prepared watermelon rind
- 3 Tbsp. Mrs. Wages Pickling Lime
- 3 quarts water
- 8 cups granulated sugar
- 1 quart white vinegar
- 1 lemon, thinly sliced
- 2 Tbsp. whole cloves
- 3 sticks cinnamon (3" pieces)
- 2 pieces ginger root (1" long)

Cook beef and onion over medium heat until meat is no longer pink; drain
- 1 lb. ground beef (90% lean)
- 1/2 cup finely chopped onion
- 1 envelope taco seasoning

- 2 cups diced fresh piuneapple
- 2 medium tomatoes, seeded and chopped

- 1 tea. ground coriander
- 3/4 tea. ground cumin
- 1/2 tea. salt
- 1/2 tea. minced garlic

- 2 cups sugar
- 1 cup water
- 1 cup light corn syrup
- 1/2 tea. salt
- 3 cups salted mixed nuts
- 1 Tbsp. butter
- 2 tea. baking soda
- 2 tea. vanilla
- 1 ta. Tabasco
- 1 tea. pepper
- 1/4 tea. crushed red pepper flakes

- 1 can (4 oz) chopped green chilies, well drained
- 1 Tbsp. minced chives
- 1/3 tea. salt
- 1/4 tea. cumin
- 3 Tbsp. sliced ripe olives

- 3/4 tea. baking powder

- Add-Ins:
- kernels from 2 ears of fresh corn
- 5-6 roasted serrano chiles, diced
- 4 thick slices of bacon, cooked crispy then chopped
- 2 green onions, thinly sliced
- 1/4 cup cilantro, chopped
- 2 cloves garlic, minced
- 4 oz. sharp cheddar, shredded
- Wet ingredients:
- 3 eggs
- 1 cup whole milk
- 1/2 cup vegetable oil
