Coleslaw-Sausage Soup

Heat oil and add sausage, cook, breaking up clumps, until no longer pink
- 2 Tbsp. oil
- 8 oz. Italian sausage, casing removed
- 6 cups chicken broth
- 4 cups bagged coleslaw mix
- 1 tea. cumin
- 1 can small red beans, rinsed
- 1 can black beans, rinsed
- 2 cups salsa, preferably purchased fresh
Pancakes - Pumpkin Pancakes #2

In a large bowl, combine the pancake mix, cinnamon and cloves

- 1/2 tea. cinnamon
- 1/4 tea. cloves

- 1 (15 oz) can green beans with liquid
- 1 peeled, diced potato (1/2" cubes)
- 1/3 cup chopped ham or pepperoni
- 1 (3 oz) pkg. chicken flavor ramen noodles with seasoning packet
Tortilla Soup

You can add other ingredients and it still tastes the same
- 1 lb. shredded, cooked chicken
- 1 (15 oz) can whole peeled tomatoes, mashed
- 1 (10 oz) can enchilada sauce
- 1 medium onion, chopped
- 1 (4 oz) can chopped green chiles
- 2 cloves garlic, minced
- 2 cups water
- 1 (14.5 oz) can chicken broth
- 1 tea. cumin
- 1 tea. chili powder
- 1 tea. salt
- 1/4 tea. pepper
- 1 bay leaf
- 1 (10 oz) pkg. frozen corn
- Options: sour cream, lime, avocados, and cheese
Corn - Pickled Corn Rounds

The day before: in a stainless steel pot combine all ingredients except corn
- 1 medium sweet onion, chopped
- 1 large red bell pepper, chopped
- 3/4 cup sugar
- 3 canned chipotle peppers in adobo sauce
- 1 Tbsp. salt
- 1 Tbsp. coriander seeds, crushed
- 1 Tbsp. Dijon mustard
- 4 cloves garlic, smashed
- 6 whole cloves
- 2 cups white wine vinegar
- 1 cup water
- 1/2 cup unsweetened pineapple juice
- 6 ears fresh corn, cut into 1/2" rounds
Green Beans - grilled with Bacon and Onions

Wash and snap the ends of the greens
- 1 lb. fresh green beans
- 1 large yellow onion, julienned
- 8 bacon slices, chopped
- 1/8 cup olive oil
- salt and pepper, to taste

Coarsely crumble ramen noodles into a large bowl
- 1 package (3 oz) ramen noodle soup mix, discard seasoning packet for another use
- 1/2 package (8 oz) coleslaw blend (cabbage slaw mix)
- 1/2 cup thawed frozen corn, rinsed
- 1/2 cup canned black beans
- 1/2 cup shredded sharp cheddar cheese
- 1/4 cup coarsely chopped fresh cilantro
- 1/4 cup ranch dressing
- 1/4 cup Taco Bell Hot Restaurant Sauce
- 1 Tbsp. fresh lime juice
tenderloin - Bacon Wrapped

In a small bowl, stir together rosemary and next 3 ingredients; rub over tenderloins

- 1 (1 lb) pkg. hot pork sausage
- 2 Tbsp. butter
- 10 eggs, lightly beaten
- 1 (4.5 oz.) can chopped green chiles, undrained
- 2/4 tea. salt
- 1/2 tea. pepper
- 1/2 tea. cumin
- Cheese sauce, divided (recipe follows)
- 8 (8") flour tortillas
- 1 cup shredded Monterey Pepperjack cheese
- Toppings: freshly jalapeno slices, salsa, chopped fresh cilantro
- CHEESE SAUCE
- 1/3 cup butter
- 1/3 cup flour
- 3 cups whole milk
- 2 cups shredded Cheddar cheese
- 1 (4.5 oz) can chopped green chilies, undrained
- 3/4 tea. salt
Cocktail Smokies in cheese sauce

Melt butter in a large skillet over medium-high heat
- 1 Tbsp. butter
- 1/4 cup chopped onion
- 3/4 cup medium-hot salsa
- 1 3 oz. pkg. cream cheese
- 4 oz. shredded mild cheddar cheese
- 8 oz. shredded sharp cheddar cheese
- dash of paprika
- 2 4-oz. cans chopped green chiles
- dash of worcestershire sauce
- 1/2 tea. salt
- 3 Tbsp. hot sauce (optional)
- 2 lb. cocktail smokies
- cooking spray
- tortilla chips
