Rodeo Chili (with chuck roast)

In a large Dutch oven, heat oil over medium-high and cook beef, in batches, for 4 minutes or until browned
- 1 Tbsp. oil
- 5 lb. boneless chick roast, trimmed and cut into 1" pieces
- 2 large onions, chopped
- 1 poblano peppers, seeded and chopped
- 2 jalapenos, seeded and chopped
- 2 red chilies, seeded and chopped
- 1 (12 oz) bottle dark Mexican beer (used Dos Equis Amber)
- 5 cups beef broth
- 1 (15 oz) can tomato sauce
- 2 Tbsp. chili powder
- 1 Tbsp. ground ancho chile pepper
- 1 Tbsp. roasted ground cumin
- 1 1/2 tea. salt
- 1 tea. garlic powder
- 3 Tbsp. masa harina
- Toppings: sour cream, shredded cheese, sliced jalapeno, and red chiles
BBQ Sauce - Alabama White Sauce

Combine all ingredients in a mixing bowl and whisk together until thoroughly incorporated
- 2 1/2 cups mayonnaise
- 1 Tbsp. apple cider vinegar
- 1/2 Tbsp. salt
- 3 Tbsp. pepper
- 1 1/2 Tbsp. cayenne pepper
- 1 Tbsp. Worcestershire sauce
- 3 Tbsp. honey

- 2 Tbsp. oil
- 2 1/2 cups chopped cooked ham, divided
- 1 cup chopped yellow onion
- 1 1/2 cups chopped red bell pepper, divided
- 6 large eggs, lightly beaten
- 1 (12 ozx) can evaporated milk
- 2 tea. chopped fresh thyme
- 1 tea. salt
- 1/2 ta.. pepper
- 1 (20 oz) pkg. refrigerated shredded has browns (they used Simply Potatoes)
- 1 (8 oz) block sharp Cheddar cheese, shredded

- 1 (32 oz) box chicken broth
- 2 (15 oz) cans black beans, drained
- 1 (15.25 oz) can niblet corn, drained
- 1 (15 oz) can tomato sauce
- 2 tea. fresh lime juice
- 1 tea. cumin
- Garnish: sour cream, shredded cheddar cheese
Sweet Potato Bread

In a large bowl, combine the flour, baking soda, baking powder, salt and spices
- 3 1/2 cups flour
- 2 ta. baking soda
- 1 tea. baking powder
- 1/2 tea. salt
- 1 tea. cinnamon
- 1 tea. nutmeg
- 1/2 tea. cloves
- 2 cups mashed sweet potatoes
- 3 eggs
- 1 cup canola oil
- 3 cups sugar
- 1 cup chopped walnuts
- 1 cup raisins
- GLAZE
- 1 1/2 cups confectioners' sugar
- 4-5 tea. orange juice
- 1 tea. grated orange peel
- 1/3 cup chopped walnuts
Hearty Cabbage Soup

In a large saucepan, cook beef and onion over medium heat until meat is no longer pink; drain
- 1 lb. hamburger
- 1 med. onion, chopped
- 3 1/2 cups shredded cabbage
- 1 med. zucchini, halved and thinly sliced
- 1 cup sliced mushrooms
- 1 carton (18.3 oz) ready-to-serve sweet red pepper soup
- 1 can (10 oz) diced tomatoes and green chillies, undrained
- 1/4 tea. hot pepper sauce
- 1/4 tea. salt
- 1/4 tea. pepper
- 1/4 cup grated Parmesan cheese
Apple Bread with Streusel Topping

Preheat oven to 350 degrees
- APPLE BREAD
- 2 cups flour
- 1 tea. baking soda
- 1/4 tea. salt
- 1/2 cup (1 stick) butter, softened
- 1 cup sugar
- 2 eggs
- 1 Tbsp. lemon juice
- 2 tea vanilla
- 2 Granny Smith applies, peeled and chopped
- STREUSEL TOPPING
- 2 Tbsp. flour
- 2 Tbsp. sugar
- 1 te3a. cinnamon
- 1 Tbsp. butter
- 2 Tbsp. brown sugar

- 1 1/2 cups whole milk
- 8 oz. cr3eam cheese
- 2 Tbsp. dried minced onion
- 2 cups shredded monterey jack

In large Dutch oven, cook bacon over medium, heat until crisp
- 1/2 lb. bacon, cut into 1/2" pieces
- 2 lb. boneless skinless chicken thights
- 2 1/2 tea. salt, divided
- 1/2 tea. pepper
- 1 lb. smoked sausage, sliced
- 2 stalks celery, chopped
- 1 green bell pepper, chopped
- 1 large sweet onion, chopped
- 4 cloves garlic, minced
- 4 large tomatoes, peeled, seeded, and chopped (about 4 cups)
- 2 tea. smoked paprika
- 2 tea. dried thyme
- 1 tea. crushed red pepper
- 5 1/2 cups chicken broth
- 3 cups basmati rice, rinsed
- Garnish: green onion, sliced, hot sauce
