Stone Fruit Compote

In small saucepan combine chopped fruit, honey, salt, water and desired flavor combination
- 2 1/4 coarsely chopped stone fruit (peaches, mectarines, plums) about 3/4 lbs.
- 2 Tbsp. honey
- pinch coarse salt
- 3 Tbsp. water
- desired flavor combination

- flavor comb: 1 star anise and 2 allspice berries
- flavor comb: 1 small stick cinnamon and 1 wide strip lemon zest
Mexican Beer Bread

In medium bowl, mix together cornmeal, flour, salt, corn kernels, green onions, sugar and baking powder
- 1 cup yellow cornmeal
- 1 cup flour
- 1/2 tea. salt
- 1/2 cup corn kernels
- 2 Tbsp. green onions, chipped
- 1/4 cup sugar
- 4 tea. baking powder
- 1/2 cup milk
- 1/2 cup Lager beer
- Tbsp. butter, melted
- 1/2 cup Cheddar cheese, shredded
- 1 egg, beaten
French Toast - Strawberry Cheesecake Stuffed

Lightly toast bread to dry the slices out (if they weren't already dry) Spread cream cheese on one side of each ...
- 2 slices of bread (the drier the better)
- 1 about 1 oz. cream cheese (whipped is easier to spread)
- 2-3 strawberries
- sprinkler of sugar
- 1 egg
- 2 Tbsp. half-and-half (or cream or milk will work too)
- pinch of salt
- pinch of cinnamon
- 1/2 tea. vanilla
- butter, for frying
- powdered sugar, whipped cream, maple syrup and strawberries to garnish

In a bowl, mix together fruits equaling 3 cups
- 4 half-pint mason jars
- 3 cups fresh or frozen fruits in season
- 3/4 cup flour
- 3/4 cup sugar
- 1/2 tea. salt
- 4 Tbsp. butter
- Whipped cream for topping
- 1 package dried beans
Smoky Scalloped Potatoes

Preheat oven to 350 degrees
- 3 Tbsp. butter
- 1 small shallot, finely chopped
- 4 cloves garlic, minced
- 1 Tbsp. flour
- salt and pepper
- 3 cups half-and-half
- 1-2 tea. smoked paprika
- 2 1/2 lb. russet potatoes, peeled and thinly sliced
- 1 cup grated sharp white cheddar cheese
- 1/3 cup freshly grated parmesan cheese
Halibut - Drunken Fish (or Salmon)

Cut open peppers, discard seed sand stema
- 4 halibut or salmon steaks, 1" thick
- 3 dried ancho or mulator peppers or 2-3 Tbsp. chili powder
- 1/4 cup tequila
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 1 Tbsp. olive oil
- one 14/5 oz. can diced tomatoes, undrained
- 1/2 tea. oregano, crushed
- 1/4 tea. salt
- 1/4 tea. ground cumin
Chicken Marinade

Marinate chicken for 24 hours
- water
- lime juice
- chili powder
- soy sauce
- pepper
- minced garlic
Chicken Chili Verde

Cook chicken in hot oil until browned, stirring often
- 1 lb. skinless and boneless chicken thighs, cut into 1" pieces
- 1 Tbsp. vegetable oil
- 1 (8 oz) container refrigerated prechopped onion
- 1 Tbsp. jarred minced garlic
- 2 cups chicken broth
- 1 cup salsa verde (use my homemade)
- 1 cup frozen corn
- 1 tea. cumin
- 1 tea. hot sauce
- 1/2 tea. pepper
- 1 (15/5 oz) can cannellini beans, drained
- Garnishes: sour cream, chopped tomatoes, chopped fresh cilantro
Chicken - with maple-orange sauce

Heat oil in skillet and add chicken, season with salt and pepper
- 2 Tbsp. olive oil
- 4 chicken cutlets, patted dry
- salt and pepper
- 1/4 cup maple syrup
- 1 Tbsp. orange marmalade
- juice of 1 lemon
