Creole Chicken Soup

In a Dutch Oven, heat oil over medium-high heat
- 2 Tbsp. vegetable oil
- 1 cup chopped onion
- 1 cup chopped red bell pepper
- 1 cup frozen whole kernel corn
- 2 cloves garlic, minced
- 1 (14/5 oz) can diced tomatoes
- 2 cups chopped cooked chicken
- 1 1/2 tea. Creole seasoning
- 1 (32 oz) carton chicken broth
- Sour cream, chopped fresh cilantro, optional
Cajun Sauce for BBQ'd Steaks

Heat oil in a large pot to medium heat
- 1 cup oil
- 2 large yellow onions, chopped
- 1/2 cup jalapenos, chopped
- 1/2 cup Anaheim peppers, chopped
- 1 cup celery, chopped
- 1 cup fresh cilantro, chopped
- 4 cloves garlic, chopped
- 2 cups steak sauce
- 1 cup Jack Daniels Whiskey
Bread Pudding (made with doughnuts) & Caramel sauce

In a large bowl break donuts into small pieces
- 2 dozen yeast doughnuts
- 1/2 Tbsp. salt
- 1 can apple pie filling
- 1 egg
- 1 cam sweetened condensed milk
- 1/3 cup heavy cream
- CARAMEL SAUCE
- 1/2 cup butter
- 1/2 cup brown sugar
- 1/3 cup heavy cream
Dill and Cheese Beer Bread

Preheat oven to 350 degrees
- 3 cups flour
- 2 Tbsp. sugar
- 1 Tbsp. baking powder
- 1 Tbsp. dill seeds
- 1 tea. salt
- 1 tea. dried dill
- 3/4 tea. baking soda
- 1/2 cup shredded cheddar cheese
- 1/2 cup shredded pepper jack cheese
- 1 12 can beer
Grilled Chicken Breasts under Bricks

Rinse and pat dry chicken breasts
- 4 boneless, skinless chicken breasts
- 1 tea. coarse salt
- 1 tea. cracked pepper
- 1/2 - 1 tea. hot red pepper flakes
- 1 Tbsp. chopped garlic
- 1 Tbsp. chopped fresh rosemary
- juice of 1 lemon
- 1/4 cup olive oil
- 4 bricks, wrapped in foil
Bread - Cheesy Chile Bread

1. Heat grill. In small bowl, combine all ingredients except bread; mix well
- 1/4 cup mayonnaise or salad dressing
- 4 oz. (1 cup) shredded Monterey Jack cheese
- 1/4 cup Old El Paso® Chopped Green Chiles (from 4.5-oz. can)
- Dash hot pepper sauce
- 1 (1-lb.) loaf French bread, cut in half lengthwise
Penne Gorgonzola (Asiago or Parmesan) with Chicken

Cook pasta according to package directions
- 1 pkg. (16 oz) penne pasta
- 1 lb. boneless skinless chicken breasts, cut into 1/2" pieces
- 1 Tbsp. olive oil
- 1 large garlic clove, minced
- 1/4 cup white wine
- 1 cup heavy whipping cream
- 1/4 cup chicken broth
- 2 cups (8 oz) crumbled Gorgonzola cheese (or Asiago or Parmesan)
- 6-89 fresh sag leaves, thinly sliced
- salt and pepper to taste
- Grated Parmigiano-Reggiano cheese and minced fresh parsley
Slaw - Sweet Texas Slaw

In a large bowl, whisk together the vinegar, oil, sugar, mustard, celery seed, and salt
- 6 Tbsp. cider vinegar
- 1/4 cup corn oil
- 3 Tbsp. sugar
- 1 Tbsp. honey mustard
- 3/4 tea. celery seed
- 1/2 tea. salt
- 8 cups thinly sliced cabbage (about 1 lb)
- 1 large green bell pepper, cut into matchstick pieces
- 1/2 cup chopped onion
- fresh ground pepper
aDressing: Steakhouse Ranch

- 1 pkg. Ranch Dressing Mix
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1/2 cup buttermilk
- 1/4 tea. black pepper
- 1/4 tea. cayenne pepper
- 1/8 tea. garlic powder
- 1/8 tea. onion powder
Eggs Benedict with Jalapeno Hollandaise

Place 2-3" water in a large skillet with high sides; add vinegar
- 1 Tbsp. white vinegar
- 4 eggs
- 1/4 cup butter, cubed
- 1 cup milk
- 1 package hollandaise sauce mix
- 2 Tbsp. chopped seeded jalapeno
- 2 English muffins, split and toasted
- 4 slices Canadian bacon, warmed
- 4 slices tomato
- 1 medium ripe avocado, peeled and sliced
