Branding Iron BBQ Sauce

In a heavy nonreactive saucepan over low heat, warm the olive oil
- 3 Tbsp. olive oil
- 1 cup finely chopped onion
- 4 garlic cloves, chopped
- 12 large jalapeno, minced
- 1 (28 oz) can crushed tomatoes with added puree
- 1 1/2 cups tomato juice
- 1 cup ketchup
- 1/2 cup prepared picante sauce (Pace is recommended brand)
- 1/2 cup dry red wine
- 1/3 cup finely chopped canned chipotle chiles en adobo
- 1/3 cup molasses
- 3 Tbsp. cider vinegar
- 2 Tbsp. packed brown sugar
- 5 tea. soy sauce
- 1/2 tea. liquid smoke (optional)
Dip - Buffalo Chicken Dip #1 (Frank's Hot Sauce)

MIX ingredients in deep baking dish until smooth BAKE at 350 for 20 mins, until hot and bubbling
- 1 pkg. (8 oz) cream cheese, softened
- 2 cans (9.75 each) Chunk Chicken Breast, drained
- 1/2 cup Frank's Redhot sauce
- 1/2 cup blue cheese dressing
- 1/2 cup crumbled blue cheese
Dill Pickles - Fried

Beat together the egg, milk and pinch of cayenne
- 1 egg
- 3/4 cup milk
- pinch cayenne
- 1/2 cup cornstarch
- 1/2 cup cornmeal
- 2 Tbsp. chopped dill
- 2 tea. paprika
- salt and pepper
- 3 dozen cold pickle slices
- canola oil for frying
Coleslaw - Basil Dill Coleslaw

In a large bowl, combine cabbage, basil and dill
- 6 cups coleslaw mix
- 3-4 Tbsp. chopped fresh basil (or 1 Tbsp. dried)
- 3 Tbsp. snipped fresh dill (or 1 Tbsp. dill weed)
- DRESSING
- 1/2 cup mayo
- 3 Tbsp. sugar
- 2 Tbsp. cider vinegar
- 2 Tbsp. half-and-half
- 1 tea. coarsely ground pepper
Breakfast Oatmeal

Combine all ingredients in slow cooker
- 2 cups dry regular oats
- 4 cups water
- 1 tea. salt
- 1/2 to 1 cup chopped raisins, cranberries, or a mixture of any dried fruit
Individual Berry Pudding Cake

1. Preheat oven to 400 degree F
- Nonstick cooking spray
- 2 eggs
- 1/4 cup sugar
- 1 teaspoon vanilla
- Dash salt
- 1 cup fat-free milk
- 1/2 cup all-purpose flour
- 1/2 teaspoon baking powder
- 3 cups assorted fresh berries (such as raspberries, blueberries, and/or sliced strawberries)
Creamy Cranberry Coffee Cake

In a large bowl, combine the flour, sugar, baking powder and baking soda
- 2 cups flour
- 1 cup sugar
- 1 1/2 tea. baking powder
- 1/2 ta. baking soda
- 1 egg
- 3/4 cup orange juice
- 1/4 cup butter, melted
- 1 tea. vanilla
- 2 cups coarsely chopped fresh or frozen cranberries
- 1 Tbsp. grated orange peel
- CREAM CHEESE LAYER
- 1 pkg (8 oz) cream cheese, softened
- 1/3 cup sugar
- 1 egg
- 1 tea. vanilla
- TOPPING
- 3/4 cup flour
- 1/2 cup sugar
- 1/2 cup cold butter, cubed
Spaghetti Squash with Herb Butter

Cook squash and shred. Transfer to a large bowl
- HERB BUTTER:
- 1 spaghetti squash (3 lb)
- 1/4 cup freshly grated Parmesan cheese
- 3 Tbsp. butter
- 1 clove garlic, minced
- 1/4 tea. salt
- 2 Tbsp. chopped fresh sage, basil or parsley
- 1/4 tea. pepper
Sausage with Spanish Rice

Cut sausage into 3/4" pieces and brown in a large skillet
- 1 lb. cooked sausage
- 1 can stewed tomatoes
- 1 box spanish rice mix
Vegetable Orzo Soup

Saute pepper and onion in oil in a Dutch oven until tender
- 1 medium sweet yellow pepper, chopped
- 1 medium onion, chopped
- 2 tea. olive oil
- 3 garlic cloves, minced
- 1 jar (24 oz) garden-style spaghetti sauce
- 1 pkg (16 0z) frozen Italian vegetables
- 1 can (15 oz) white kidney or cannellini beans, rinsed and drained
- 1 can (14 1/2 oz) chicken broth
- 1/2 lb. small red potatoes, quartered
- 1 cup water
- 1/3 cup uncooked orzo pasta
- 1/2 tea. dried marjoram
- 1/2 tea. dried thyme
