Acorn Squash - Stuffed

Coat a 9x13 microwave-safe baking dish with cooking spray
- 2 acorn squash, halved crosswise, seeded
- 1 pouch (8.5 oz.) Uncle Ben's Ready Whole-Grain Medley, roasted garlic flavor
- 2 Tbsp. butter
- 1 onion, chopped
- 1/3 cups sweetened dried cranberries
- 1/4 cup peacan pieces
- 1/4 cup orange juice
- 1/2 tea. grated orange zest
- 1/2 tea. salt
Special Hamburger Sauce

Combine ingredients in a medium bowl and serve with burgers
- 1/2 cup mayonnaise
- 2 Tbsp. ketchup
- 1 Tbsp. finely grated onion
- 1 Tbsp. sweet relish
- 2 tea. adobo sauce fro canned chipotle chiles in adobo
- 1/8 tea. celery salt
- 1/8 tea. salt
Spicy Remoulade Sauce

Combine all ingredients in a food processor
- 1 1/4 mayonnaise
- 1/4 cup stone-ground or Dijon mustard
- 1 tea. Frank's Red Hot Sauce
- 1 garlic clove, peeled and roughly chopped
- 1 Tbsp. pickle juice
- 1 Tbsp. capers (optional)
- 1 tea. horseradish
- 1/2 tea. hot paprika
Dip - Mexican Dip #1 (w/ cheese and chili)

Layer all ingredients as listed with Jalapenos on top
- 1 oz. pkg cream cheese, softened
- 1 can Hormel chili w/beans
- 1 can green chilies, chopped
- Scallions, chopped
- 2 cups shredded colby jack and cheddar cheese

Pumpkin "Ravioli" with Sage Butter Sauce

In a mini food processor, process toasted almonds until finely ground
- PUMPKIN RAVIOLI
- 1/2 cup natural (unblanced) almonds, toasted
- 2/3 cup grated Parmesan cheese
- 1 cup canned unsweetened solid-pack pumpkin
- 2 Tbsp. mango chutney, finely chopped
- 1 tea. Dijon mustard
- 1 tea. sugar
- 1/2 tea. salt
- 1/4 tea. peppr
- 40 wonton skins (each 3 1/4" square)

- SAGE BUTTER SAUCE
- 1 tea. cornstarch
- 1 Tbsp. cold water
- 1 cup chicken broth
- 2 tea. dried sage
- 3 Tbsp. butter
Spiced Pumpkin Butter

In a 5 qt. heavy pot, combine pumpkin, maple syrup, apple juice, lemon juice, ginger, cinnamon, nutmeg, and salt
- 2 - 15 oz. cans pumpkin pure
- 1 1/4 cups maple syrup
- 1/2 cup apple juice
- 2 Tbsp. lemon juice
- 1 tea. ground ginger
- 1/2 ta. cinnamon
- 1/2 t3a. nutmeg
- 1/4 tea. salt
