Combine coleslaw ingredients in a large mixing bowl
- Coleslaw:
- 1 pound coleslaw mix
- 1 cup shredded carrots
- 1/2 cup diced red onion
- 1 red bell pepper sliced in matchstick size strips
- 1 cup corn, frozen, thawed
- 1/2 cup minced, fresh cilantro
- Chili-Lime Dressing:
- 1/3 cup lime juice (about 2 fresh limes)
- 1 clove garlic, minced
- 1 teaspoon Mexican hot chili sauce
- 1/2 teaspoon Spice Islands® Ground Cumin
- 1/8 teaspoon salt
- 1/2 cup Mazola® Corn Oil
Brussels Sprouts - Roasted Maple Dijon Brussel Sprouts

Preheat the oven to 425 degrees
- 2 lbs. fresh brussel sprouts, halved
- 1/3 cup sliced almonds, toasted
- 1/3 cup + 2 Tbl. olive oil
- 2 Tbl. cider vinegar
- 2 Tbl. maple syrup
- 1 Tbl. Dijon mustard
- 1 tsp. garlic, minced
- salt and pepper to taste

- 3 Tbsp. canola oil, divided
- 1/3 cup finely diced red bell pepper
- 2 green onions, ends removed, sliced
- 1 1/2 - 2 tea. lemon pepper seasoning
- 34 Tbsp. mayonnaise
- 1 Tbsp. Dijon mustard
- 1 egg, lightly beaten
- 1 cup panko breadcrumbs, divided

- 1 medium onion, thinly sliced
- 4 medium potatoes (1 1/2 lb, cut into 1/2" cubes
- 1 tea. seasoned salt

- 1 can chooped green chiles, undrained (4.5 oz)
- 1 cup Mexican shredded cheese
- 1/2 cup salsa

- 1/2 cup finely chopped red onion

- 1 tea. salt
- DRESSING
- 1 cup mayonnaise
- 1 Tbsp. white vinegar
- 1 Tbsp. prepared horseradish sauce
- 1 tea. Dijon mustard
- 1/8 tea. hot pepper sauce
- 1/4 cup chopped fresh parsley
- 1 clove garlic, minced
