In medium bowl, combine beans, lime juice and 2 Tbsp
- 1 can refried beans
- 2 tea. fresh lime juice
- salt and pepper
- 1/2 cup sour cream
- 1/2 cup grated cheddar
- 1 can chopped chilies
- 2 plum tomatoes, seeded and chopped
- 1 avocada, diced small
- 1 cup shredded romaine lettuce
- 2 green onions, chiopped
- tortilla chips for serving
Cranberry Pepper Jelly (sandwich spread)

Makes about 2 1/2 cups It made 2 - 8 oz
- 3 finely chopped red bell peppers
- 2 finely chopped, seeded Fresno chiles or red jalapenos
- (I first used 2 red & 2 green jalapenos - too hot - just use a total of 2)
- 1 cup sugar
- 1/2 tea. salt
- 1/4 cup liquid pectin (a little less than 1 pouch)
- 1 Tbsp. fresh lemon juice
- 1 - 12 oz. package fresh or frozen cranberries, coarsely chopped

- 1 cup orange marmalade
- 2 Tbsp. hoisin sauce
- 1 Tbsp. plus 1 tea. soy sauce
- 1 Tbsp. rice vinegar
- 1 Tbsp. chili sauce
Southwest Chopped Salad w/ Lime & Jalapeno Dressing

Whisk lime juice, oil, and jalapeno in a large bowl until blended
- 3 Tbsp. fresh lime juice
- 2 Tbsp. extra virgin olive oil
- 1 tea. seeded, deveined and minced jalapeno
- 1 can (15 oz) black beans, rinsed and drained
- 1 cup corn kernels removed from 1 ear of corn
- 1/2 cup cored, seeded, and diced tomato
- 1 green onion, trimmed and thinly sliced
- 1/2 med. avocado, peeled, pitted and diced (about 1/2 cup)
- 3 Tbsp. chopped fresh cilantro

- 1 cup fresh or frozen cranberries, plus extra for bottle
- 2 Tbsp. sugar
- 2 cups distilled white vinegar
Flank Steak - Quick Marinated

Put flank steak in a zip lock
- 2 lb. flank steak
- 1/4 cup grainy mustard
- 2 Tbsp. fresh lime juice
- 1 tea. worcestershire sauce
- 1 Tbsp. soy sauce
- 1 Tbsp. hoisin sauce
- 1 tea. minced garlic
- 1 tea. minced peeled ginger
Sausage Ravioli Lasagna

Cook ravioli according to package directions
- 1 pkg. (25 oz) frozen cheese ravioli
- 1 1/2 lbs. bulk Italian sausage
- 1 container (15 oz) ricotta cheese
- 1 egg, lightly beaten
- 1 tea. dried basil
- 1/2 tea. Italian seasoning
- 2 jars (one 26 oz. and one 14 oz) spaghetti sauce
- 2 cups (8 oz) shredded Italian cheese blend
Pickled Cranberries

- 12 oz. bag fresh cranberries, rinsed and drained
- 1 1/4 cups sugar
- 1 1/4 cups cider vinegar
- 1/2 cup apple cider
- 1/8 tea. ground cloves
- 1/8 tea. ground allspice
- 1/8 tea. black pepper
- 1/8 tea. ground cinnamon
- 1 tea. freshly grated ginger
Rhubarb Freezer Sauce

Bring the orange juice, honey, and cinnamon to a boil in a large saucepan
- 2 cups orange juice
- 1 cup honey
- 1/2 to 1 tea. cinnamon
- 4 cups rhubarb, cut into 1/2" slices
- 1/2 cup golden raisins

- 2 cups milk
- 1 cup heavy cream
- 2 cups shredded cheddar cheese, divided
- 2 cups shredded Gruyere cheese
