Peel and slice sweet potatoes
- 4 large sweet potatoes
- 4 Tbsp. butter
- 1/2 cup brown sugar
- 1 tea. salt
- 1/4 tea. lemon rind
- 1 tea. grated orange rind
- 1 cup canned crushed pineapple in syrup
- 2 tea. cornstarch

Crunchy Salsa Chicken Bake

Preheat oven to 350 degrees
- 1 box (12 count) Oretga yellow corn taco shells, broken into pieces
- 1 bag (20 oz) cubed, cooked chicken
- 1 packet taco seasoning
- 1 jar (16 oz) thick and chunky ,medium salsa
- 1 cup chicken broth
- 1/4 cup Ortega thick and smooth medium taco sauce
- 1 cup sour cream
- 1 can (4 oz) diced green chiles
- 1 cup pimento stuffed olives, rinsed
- 1/2 cup chopped cilantro
- 4 cups Mexican blend shredded cheese, divided
Nuts - Spicy Nuts (spanish peanuts and pumpkin seeds)

- 2 Tbsp. butter, melted
- 1 Tbsp. brown sugar
- 1 1/2 te. chili powder
- 1 tea. Mexican oregano
- 1/2 tea. salt
- 1/2 tea. cumin
- 1/2 tea. ground coriander
- 1 cup raw pumpkin seeds
- 1 cup raw spanish peanuts

Heat oven to 450 degrees. In medium bowl, stir Bisquick, cheese, milk and 12/2 tea
- 2 cups Bisquick mix
- 1/2 cup shredded Italian five-cheese blend
- 1 tea. dried rosemary, crushed
- 2 Tbsp. butter
- 1/8 tea. garlic powder
Mini Shepherd's Pies

In a large skillet, cook beef and onion over medium heat, until meat is no longer pink
- 1 lb. ground beef
- 3 Tbsp. chopped onion
- 1/2 tea. minced garlic
- 1/3 cup chili sauce or ketchup
- 1 Tbsp. cider vinegar
- 1/2 tea. salt
- 1 1/4 cups water
- 3 Tbsp. butter
- 1 1/4 cups mashed potato flakes
- 1 pkg. (3 oz) cream cheese, cubed
- 1 tube (12 oz) refrigerated buttermilk biscuits
- 1/2 cup crushed potato chips

Tangy Mozzarella Bites

Directions In a large bowl, combine the oil, vinegar, garlic, basil and pepper
- Ingredients
- 1/4 cup olive oil
- 1 to 2 teaspoons balsamic vinegar
- 1 garlic clove, minced
- 1 teaspoon dried basil
- 1 teaspoon coarsely ground pepper
- red pepper flakes to taste
- 16 ounces cubed part-skim mozzarella cheese
Pineapple Banana Mini Loaves

Preheat oven to 350 degrees
- 1 pkg. (2 layer size) yellow cake mix
- 1 pkg. (3.4 oz) Jell-o vanilla instant pudding and pie filling
- 4 eggs
- 1/4 cup vegetable oil
- 1 tea. cinnamon
- 1 can (20 oz) crushed pineapple, juice drained and 1 cup reserved
- 2 medium ripe bananas, well mashed (1 cup)
- 1/21 cup chopped pecans
- Cream Cheese Glaze
- CREAM CHEESE GLAZE
- 2 oz. cream cheese, softened
- 1 Tbsp. milk
- 1/2 cup powdered sugar
Poppers - Sweet and Spicy Jalapeno Poppers

Cut jalapenos in half lengthwise and remo3e seeds; set aside
- 6 jalapeno peppers
- 4 oz. cream cheese, softened
- 2 Tbsp. shredded cheddar cheese
- 6 bacon strips, halved widthwise
- 1/4 cup packed brown sugar
- 1 Tbsp. chili seasoning
Salsa Cruda for Fish and Poultry

Rinse, steam, seed and chop the Anaheim chiles
- 3 Anaheim chiles (9 oz. total)
- 1 1/2 lb. tomatoes, cored and chopped
- 2 green onions, ends trimmed, thinly sliced
- 2 cloves garlic, minced
- 2 Tbsp. chopped fresh cilantro
- 1-3 Tbsp. serrano chiles, minced (optional)
- salt and pepper
