Crown Roast with Stuffing

Place roast, rib ends up, in a large shallow roasting pan; sprinkle with seasoning salt
- 1 pork crown roast (12 ribs and about 8 lbs)
- 1/2 tea. seasoning salt
- STUFFING
- 1/4 cup butter, cubed
- 1 cup sliced fresh mushrooms
- 1 medium onion, grated
- 1 celery rib, finely chopped
- 1 cup chopped dried apricots
- 1/2 tea. dried savory
- 1/2 tea. drid thyme
- 1/4 tea. salt
- 1/4 tea. pepper
- 3 cups soft bread crumbs
- 1/3 cup apricot preserves
Gemelli Pasta with Spicy Sausage & Spinach

Cook pasta as directed Meanwhile, heat oil in a 10-12" nonstick skillet over medium-high heat
- 1 lb. gemelli (twisted) pasta
- 1 Tbsp. olive oil
- 1 small onion, chopped
- 1 lb. spicy sausages, casings removed
- 1 cup chicken broth
- 1/2 cp heavy cream
- 1/4 tea. nutmeg
- 2 bags (5-6 oz. ea.) baby spinach
- grated parmesan
Quiche - Bacon & Chile (or ham)

In a bowl, combine eggs, milk, chiles and seasonings; mix well
- 4 eggs, beaten
- 1 1/2 cup milk
- 4 oz. can diced green chiles, drained
- 1/2 tea. salt
- 1/8 tea. pepper
- 8 oz. pkg. shredded cheddar or Swiss cheese
- 1 tea. flour
- 8 sliced bacon, chopped and crisply cooked (or diced ham)
- 10 " pie crust
- Optional: Add fresh chopped asparagus
Potatoes - Individual Potato Gratins

Generously coat 12 muffin cups with cooking spray
- 1 1/4 cups shredded sharp Cheddar cheese, about 5 oz.
- 3 Tbsp. chopped fresh parsley
- 2 lb. small all-purpose potatoes, thinly sliced
- 1 envl. (1/5 oz) four cheese sauce mix, such as Knorr
- 1 1/2 cups milk
- 2 eggs, beat3en
- oregano sprigs, optional
Broccoli Casserole (like Campbell's Green Bean Casserole)

Preheat oven to 350 degrees
- 1 10 3/4-oz. can cream of mushroom soup
- 1/2 cup milk
- 1 tea. soy sauce
- 1/8 tea. pepper
- 4 cups bite-sized broccoli florets, lightly steamed
- 1 1/3 cups French's French Onions, divided
- 3/4 cup shredded Cheddar cheese, divided
Cran-Raspberry Honey Spread

- 2 1/2 cups fresh or frozen sweetened raspberries, thawed
- 2 cups fresh or frozen cranberries, thawed
- 1 cup chopped peeled apple
- 2 1/2 cups honey
- 1 1/2 cups sugar
- 1 pouch (3 oz) liquid fruit pectin
Rhubarb Blackberry Chutney

Great as a condiment to roasts and sautes
- 4 cups fresh blackberries
- 2 cups thinly sliced frozen rhubarb, thawed
- 2 cups thinly sliced celery
- 1 cup chopped red onion
- 1 cup sugar
- 1 cup packed brown sugar
- 3/4 cup dry red wine
- 1/4 cup red wine vinegar
- 1 tea. ground ginger
- 1/2 tea. cinnamon
- 1/4 tea. ground cloves
- 1/4 tea. salt
- 2 garlic cloves, minced
Ham and Sausage Jambalaya

In a bowl, mix salt, peppers, and paprika and coat chicken with mixture
- 1/2 tea. salt
- 1/2 tea. black pepper
- 1/2 tea. white pepper
- 1/2 tea. cayenne pepper
- 1/2 tea. paprika
- 1/2 lb. chicken breast (3/4" dice0
- 3 Tbsp. vegetable oil
- 2 onions, chopped
- 3 (or more) cloves garlic, minced
- 1 rib celery, chopped
- 1 tomato, chopped
- 1 cup raw, long grain rice
- 1 1/2 cups chicken stock
- 2/4 lb. smoked sausage, such as Kielbasa, sliced thin
- 1 lb. cooked ham, diced
- 8 green onions, chopped
- 1/4 cup minced parsley
Tuna and Avocado Stuffed Tomatoes

Combine all ingredients. Cut the tops off 2 medium tomatoes and scoop out seeds and cores
- 6 oz. tuna, drained and flaked
- 1 small avocado, cubed
- 1/4 tea. pepper
- 1 Tbsp. chopped fresh dill
- 1 medium lemon, juiced
Cranberry Upside-Down Cake (slow cooker)

Stir together first 3 ingredietns in a small bowl until blended
- 1 cup packed brown sugar
- 1/2 cup butter, melted
- 1 (14 oz) can whole-berry cranberry sauce
- 1 (12 oz) pkg. fresh cranberries
- 1 (16 oz) pkg. pound cake mix
- 3/4 cup milk
- 2 eggs
- 1/2 t3a. almond extract
