Salsa - Pineapple & Jalapeno Salsa

Cut the top and skin off pineapple and remove the eyes and core
- 4 cups from 1 small, fresh, juicy-ripe pineapple, diced
- 2 Tbsp. jalapeno pepper, minced
- 1/4 cup minced green onion, including green tops
- 3 Tbsp. chopped fresh cilantro
- 1 Tbsp. corn or vegetable oil
- Juice of 1 large lime (3 Tbsp)
- salt and pepper
Potatoes - Smoked Chile Scalloped Sweet Potatoes

Preheat oven to 375 degrees
- 2 cups heavy cream
- 1 Tbsp. Chipolte pepper puree
- 3 med. sweet potatoes, peeled and thinly sliced 1/8" thick
- salt and pepper
Mixed Stone Fruit Jam (peaches, plums, necatrines, cherries, etc)

Yield: 3 half pints
- 3 cups pitted and chopped stone fruit (use any combination of peaches, plums, nectarines, or even cherries (about 1 1/2 pounds)
- 2 cups sugar
- zest and juice from 1 lemon
Pork Chops - Cranberry

In a saucepan, combine sugar and 1 1/2 cups water
- 1 1/2 cups sugar
- 1 3/4 cups water, divided
- 1 pkg. (12 oz) fresh or frozen cranberries
- One 16 oz. can of whole cranberry sauce can be substituted
- for the cranberries, sugar and water - just addbbq sauce and
- 1/4 cup water
- 1/2 cup bbq sauce
- 8 bone-in pork chops (1/2-3/4" thick)
- slat and pepper
- 2 Tbsp. vegetable oil
- 2 Tbsp. cornstarch
- 1/4 cup cold water
Turkey - Stir-fried Turkey in Lettuce Wraps

Insmall bowl, combine soy sayce, fish sauce, and sugar and stir until sugar dissolves
- 1/4 cup soy sauce
- 4 tea. fish sauce
- 4 tea. sugar
- 1 Tbsp oil
- 1 large scallion, finely chopped
- 2 Tbsp. minced peeked fresh ginger
- 2 garlic cloves, minced
- 1 small jalapeno, seeded and finely chopped
- 1 lb.ground turkey (93% lean)
- 2 large heads Bibb, Boston or iceberg lettuce, leaves separated
Sticky Chicken Wings

Preheat oven to 300 degrees
- 3/4 cup poacked brown sugar
- 1/4 cup fish sauce
- 1/4 cup lemon juice
- 2 Tbsp. soy sayce
- 1 " piece fresh ginger, smashed and peeled
- 1 serrano or jalapeno chile, halved lengthwise, plus sliced chile for serving (optional)
- 2 lbs. chicken wings, cut in half at the joint (wing tips removed)
Bacon-Brown Sugar Monkey Bread

Make Maple-Nut butter: In a food processor combine butter, pecans and syrup
- 4 slices bacon
- 1 cup packed brown sugar
- 1 recipe Maple-Nut Butter (use 1/3 cup)
- 1/4 cup whipping cream
- 1 Tbsp. vanilla
- 1/4 tea. Chinese five-spice powder
- 1 16 oz. loaf frozen sweet roll dough, thawed
- 1 cup chopped pecans
- 1 cup golden raisins
- MAPLE-NUT BUTTER
- 1 cup butter, softened
- 1/2 cup pecan halves, toasted
- 1/4 cup maple syrup
Scrambled Egg Muffins

1. In a skillet, cook the sausage over medium heat until no longer pink; drain
- 1/2 pound bulk pork sausage
- 12 eggs
- 1/2 cup chopped onion
- 1/4 cup diced green chilies
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon garlic powder
- 1/2 cup shredded Cheddar cheese
Southwest Green Chile Cheese Log

Combine the chile and the cheeses in a bowl and mix well
- 1/2 cup chopped green New Mexico chiles, which have been roasted and peeled
- 1 - 8 oz package cream cheese, softened
- 1/4 cup crumbled blue cheese
- 2 Tbsp. ground red New Mexico chile
- 3/4 cup pecans, finely chopped
Corn on the Cob - Zesty grilled corn

Melt butter in small saucepan; add the mustard, horseradish, Worchestershire sauce & lemon-pepper
- 1/3 cup butter, cubed
- 2 tablespoons prepared mustard
- 2 tablespoons prepared horseradish
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon lemon-pepper seasoning
- 6 ears corn
