Salmon - BBQd with wine country butter baste

Soak chips 30 minutes and throw on fire just before cooking
- Apple wood or Alder chips
- 1/2 cup (1 cube) butter, divided
- 2 cloves garlic, minced
- 1/2 cup dry white wine
- 3 Tbsp. chopped fresh hebrs such as chives, thyme, basil and parsley
- 2 tea. grated lemon zest
- 1 whole salmon (8-10 oz. per person), butterflied with skin intact
Spicy Pepper Slaw w/ green beans and asparagus

In a large bowl, combine the first 9 ingredients
- 3 cups shredded cabbage
- 2 celery ribs, chopped
- 1 medium green pepper, julienned
- 1 cup fresh green beans, cut into 1" pieces
- 1 cup fresh asparagus, cut into 1" pieces
- 1 bunch green onions, chopped
- 1 banana pepper, seeded and chopped
- 2 jalapeno peppers, seeded and chopped
- 1 serrano peppers, seeded and chopped
- 1/2 cup cider vinegar
- 3 Tbsp. olive oil
- 1 Tbsp. lime juice
- 1 Tbsp. minced fresh thyme
- 1 Tbsp. snipped fresh dill
- 1 Tbsp. minced fresh cilantro
- 1 tea. salt
- 1 tea. pepper

- 1 tea. brown sugar

- 1 tea. mustard powder

- 1/2 tea. garlic powder
- 2 tea. olive oil
- 2 small pork tenderloins
- 4 ears corn, husked
- FOR THE SAUCE
- 3/4 cup apple cinder vinegar
- 3 Tbsp. brown sugar
- 2 Tbsp. ketchup
- 1/2 tea. red pepper flakes
- salt

- 1 - 24 oz. jar garlic and herb spaghetti sauce
- 3 cups water
BBQ Sauce - Quick BBQ Sauce

Stir all ingredients together, then season to taste with the hot-pepper sauce
- 3/4 cup ketchup
- 1/3 cup grainy mustard
- 1 Tbsp. worcestershire sauce
- 1 Tbsp. cider vinegar
- 1 Tbsp. brown sugar
- Hot-pepper sauce to taste
Pimento Cheese

Grate cheddar by hand. Add the rest of the ingredients and stir lightly to mix
- 16 oz. aged white cheddar
- 1 (2 oz) jar diced pimentos, drained
- 6 Tbsp. mayonnaise
- 1/2 tea. chili powder
- 1/8 tea. pepper
- 1/8 tea. cumin
- 1/4 tea. cayenne pepper, or to taste
