Friendship Tea Mix

In a large bowl, combine all the ingredients
- 1 jar (21.1 oz. orange breakfast drink mix
- 1 cup sugar
- 1/2 cup sweetened lemonade drink mix
- 1/2 cup unsweetened instant tea
- 1 pkg. (3 oz) apricot gelatin
- 2 1/2 tea. ground cinnamon
- 1 tea. ground cloves
Rhubarb Coffee Cake

Sift together four, allspice, cloves, cinnamon, sugar, salt and baking soda
- 2 cups flour
- 1 / tea. allspice
- 1/4 tea. cloves
- 1 tea. cinnamon
- 1 1/4 cup sugar
- 1 ta. salt
- 1 tea. baking soda
- 2 eggs
- 1/2 cup oil
- 1/3 cup milk
- 2 cups rhubarb, cut in 1" pieces

- TOPPING
- 1/2 cup brown sugar
- 1/2 cup flour
- 4 Tbsp. buter
- 3/4 cup coconut
- 1/4 cup chopped nuts
Breasts - Chicken in Lemon Caper Butter

Put all ingredients except chicken in skillet and bring to a boil; add chicken
- 1/2 cup butter
- 2 Tbsp. lemon juice
- 1 tea. salt
- 1 clove garlic
- 1/8 tea. pepper
- 1/2 tea. paprika
- 1 (6 oz) can mushrooms
- 2 Tbsp. capers
- 4 chicken breasts, cut in bite-size pieces
Chickpea Salad with Feta Cheese

Heat oil in a skillet over medium heat
- 1/4 cup olive oil
- 1/2 cup diced red onion
- 1 Tbsp. minced garlic
- 2 cans (15 oz each) chickpeas, drained and rinsed
- 1/2 cup minced fresh cilantro
- 1/2 cup crumbled feta cheese
- 16 kalamata olives, pitted and chopped
- 1/4 cup sliced green onions
- zest and juice of 1 lemon
- 1-2 serrano chiles, minced
Pineapple Jalapeno Marmalade

Makes 6 - 8 oz
- 3 1/2 cups crushed fresh pineapple, juices reserved
- 1 large jalapeno, finely chopp3ed
- 2 Tbsp. red pepper flakes
- 4 cups sugar
- 1 lemon, zested and juiced
Marinade - Rosemary Balsamic

In a small bowl, mix all sauce ingredients until thoroughly combined
- 1/2 cup olive oil
- 1/4 cup balsamic vinegar
- 2 tea. brown sugar
- 1 Tbsp. garlic, pureed
- 1/2 tea. fresh or dried rosemary, chopped
- 1/2 tea. salt
- 1/2 tea. black pepper
Chorizo/Potato Breakfast Casserole

- 1 lb. uncooked chorizo
- 9 eggs
- 2 1/2 cups 2% milk
- 1 Tbsp ground mustard
- 1 tea. cayenne
- 1 pkg (28 oz) frozen O'Brien potatoes
- 2 cups (8 oz) shredded Monterey Jack cheese
- 1 jar (16 oz.) black bean and corn salsa
Honey Mustard Dipping Sauce

Whisk together all the ingredients
- 1/4 cup mayonnaise
- 1 1/2 tea. yellow mustard
- 2 tea. honey
- pinch of paprika
Nacho Style Soup

Combine evaporated milk, chicken broth and flour in medium saucepan over medium-high heat
- Toppings:
- 2 cans (12 fl. oz each) evaporated milk
- 1 cup chicken broth
- 1/4 cup flour
- 1/4 tea. cayenne pepper
- 2 cups (8 oz pkg) shredded cheddar cheese
- sliced green onions
- addt'l shredded cheddar cheese
- salsa
- tortilla chips
Green Beans - Thai-Style

In a bowl, combine the soy sauce, hoisin sauce, peanut butter and red pepper flakes; set aside
- 1 Tbsp. soy sauce
- 1 Tbsp. hoisin sauce
- 1 Tbsp. creamy peanut butter
- 1/8 tea. crushed red pepper flakes
- 1 Tbsp. chopped shallot
- 1 tea. minced fresh ginger root
- 1 Tbsp. canola oil
- 1/2 lb. fresh green beans, trimmed
