Baked Beans from scratch

Drain beans, and place them in the insert of a 4 qt
- 3 cups dried white navy beans, soaked overnight
- 1 1/2 cups ketchup
- 1 1@ cups water
- 1/4 cup molasses
- 1 Vidalia or other sweet onion, chopped
- 1 Tbsp. ground mustard
- 6 slices bacon, chopped
- 1 cup firmly packed brown sugar
- salt
- pepper
Finger Sandwiches (made with Christmas cookie cutters)

In a bowl, combine the first 6 ingredients; set aside
- 3/4 cup mayonnaise
- 3/4 cup shredded sharp cheddar cheese
- 1 can (6 oz) tuna fish
- 2 Tbsp. prepared french salad dressing
- 1/2 tea. prepared horseradish
- dash hot pepper sauce
- 48 bread slices
Carmel Apple Strata

In a small saucepan, combine the brown sugar, butter and corn syrup
- 2 cups packed brown sugar
- 1/2 cup butter, cubed
- 1/4 cup corn syrup
- 3 large apples, peeled and chopped
- 2 Tbsp. lemon juice
- 1 Tbsp. sugar
- 1 tea. apple pie spice
- 1 loaf (1 lb) day-old cinnamon bread
- 1/2 cup chopped pecans
- 10 eggs
- 1 cup 2% milk
- 1 tea. salt
- 1 tea. vanilla
Spicy Buffalo Chicken Sandwiches

In a large skillet, heat oil over medium-high
- 1 Tbsp. extra virgin olive oil
- 1 lb. boneless, skinless chicken thights, cut into 11/2" pieces
- 1 lb. boneless, skinless chicken breasts, cut into 1 1/2" pieces
- 1 medium yellow onion, diced small
- 3 garlic cloves, roughly chopped
- 1 medium red bell pepper, diced small
- 1 can (14.5 oz) crushed tomatoes
- 1/4 hot pepper sauce, such as Frank's
- 3 Tbsp. worchestershire sauce
- 2 Tbsp. yellow mustard
- 1 Tbsp. unsufured molasses
- 8 hamburger buns
Lime Green Tea Quencher

Let 4 green tea bags steep in 2 cups hot water for 4 minutes
- 4 green tea bags
- 2 cups white grape juice
- 1 lime
- sugar to taste
Dessert - Grilled Pound Cake (and Berries grilled in foil)

Combine all ingredients, except pound cake
- 1 lb. strawberries and blueberries, halve strawberries
- 1 tea. finely grated lemon zest
- 1 Tbsp. lemon juice
- 1/4 cup sugar
- 3/4 tea. cornstarch
- 1 Tbsp. butter, divided
- Grilled slices of pound cake
- Creme Fraiche, for garnish
Bread Pudding - Mulate's w/ hamburger buns, coconut milk

Combine eggs, milk, Coco Lopez, sugar and vanilla
- 6 hamburger buns, broken into small pieces
- 6 eggs
- 1 quart milk
- 1/2 cup flaked coconut
- 1/2 can Coco Lopez
- 2 cups rasins
- 1 tea. vanilla estract
- 1 cup sugar
- t tea. baking powder
Cube Steak/Swiss Steak - crockpot

Put flour, salt and pepper in a zip lock and mix well
- 4-6 cube steaks
- vegetable oil
- 1 onion, sliced
- 1/2 cup flour
- 1 tea. salt
- 1/2 tea. pepper
- 1 pkg. brown gravy mix
- 1 pkg. onion soup mix
- 1 cup water
- 1 can Cream of Mushroom soup
Salsa - Super Chunky Cooked Salsa

- 20 poblano chilies, roasted, seeded and peeled
- 2 yellow bell peppers, seeded and chopped
- 1 orange bell peppers, seeded and chopped
- 6 serrano chilies, seeded and chopped
- 1 large white onion, peeled and diced
- 3 Tbsp. ground cumin
- 1/2 ta. cayenne pepper
- 1 1/2 tea. coarsely ground dried jalapenos
- 1 cans (28 oz each)crushed tomatoes in their juice
- 1 tomato can filled with water
- 2 Tbsp. brown sugar
- 2 Tbsp salt
- 2 Tbsp. cider vinegar
- 1 cup fresh cilantro, copped
- juice of 3 limes
Santa Fe Pasta Salad

Prepare pasta according to package directions
- Dressing:
- 1 pkg. rotini pasta
- 1/2 cup grated Parmesan cheese
- 1/2 cup cooked yellow corn kernels
- 1/4 cup chopped green onion
- 1/2 cup diced tomatoes
- thick cup salami, cubed
- jalapeno cheese, cubed
- 1 can black beans
- marinated artichokes
- sliced green or black olives
- 1 chicken breast, cooked and diced
- 1 1/4 cups V-8 juice
- 1 1/2 Tbsp. olive oil
- 1 Tbsp. red wine vinegar
- 1 1/2 tea. chili powder
- 3/4 tea. paprika
- 1/2 tea. salt
- 1/4 tea. pepper
