Marinade - Jamaican Jerk for chicken

Puree all in a good processor or blender
- 1/4 cup vegetable oil
- 3 scallions, chopped
- 1 habanero pepper
- 4 tea. white vinegar
- 2 cloves garlic, chopped
- 1 tea. fresh thyme, chopped
- 1/4 tea. ground allspice
- 1/4 tea. ground ginger
Ravioli Lasagna

Heat oven to 375 degrees. Spoon a thin layer of sauce into the bottom of a 9x13 baking dish
- 1 24-26 oz. jar marinara sauce (actually need more than 1 jar but probably not two whole jars)
- 2 20 oz. packages refrigerated large cheese ravioli
- 1 10 oz. box frozen chopped spinach, thawed and squeezed of excess liquid
- 2 cups shredded mozzarella (8 oz)
- 1/2 cup grated parmesan (2 oz.)
aDressing: Creamy Lime-Cilantro Ranch

This is tough folks. Place milk, mayo, and ranch mix in a blender
- 1 pack (1oz) Hidden Valley Ranch Dressing Mix
- ignore directions on the packet
- 1 C mayo
- 1/2 C milk
- 1 lime
- 2 cloves garlic, roughly chopped
- 1/2 C roughly chopped cilantro
- 1/4 C green salsa (La Costena is best)
- hot sauce
Salmon - Maple Bourbon Glazed

Preheat broiler Combine 1 tea
- 5 tea. fresh orange juice, divided
- 1 Tbsp. maple syrup
- 1 tea. bourbon
- 1/8 tea. ground red pepper
- 4 (6 oz) salmon fillets
- cooking spray
- 1/4 tea. salt
Onion Cheese Bread

Preheat oven to 350 degrees
- 3 cups flour
- 1 Tbsp. baking powder
- 3 Tbsp. sugar
- 1 cup grated cheddar cheese
- 4 green onions, chopped
- 1 1/2 cups beer
- 1 egg, beaten
- 1 tea. sesame seeds
Pork Chops Beer-Brined Pork-Loin Chops w/ jalapenos

The day before: Trim fat from chops
- 4 boneless pork top loin chops, cut 1 1/2 inches thick
- 1 3/4 cups water
- 1 3/4 cups stout (dark beer)
- 3 tablespoons coarse salt
- 2 tablespoons mild-flavor molasses
- 4 cloves garlic, minced
- 2 teaspoons cracked black pepper
- Sliced pickled jalapeiio chile peppers
Pea Salad

Thaw, rinse and drain peas
- 1 - 16 oz. bag frozen peas, thawed
- 5-6 slices bacon, crumbled
- 1-2 stalks celery, diced
- 1 small Walla Walla onion, diced
- 1 cup cashews
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 2 Tbsp. sugar
- Dill weed to taste
Tomatillos, Fried Green

Make sauce: In a medium bowl, mix sour cream, yogurt, honey and hot sauce
- 6 tomatillos, sliced 1/2" thick
- salt
- 1 cup flour
- 1 cup buttermilk
- 1 cup plain breadcrumbs
- 1 cup fine-milled cornmeal
- 8-10 sprigs fresh thyme, leaves stripped
- 1 Tbsp. garlic powder
- 2 Tbsp. chile powder
- vegetable oil
- SAUCE
- 1/2 cup sour cr3am
- 1/2 cup Greek yogurt
- 1/4 cup honey
- 2 Tbsp. Tabasco
- salt
Flank Steak - Marinated

- 2 lb. flank steak
- 1/2 cup olive oil
- 1 /.2 cup soy sauce
- 1/4 cup brown sugar
- 4 cloves garlic, minced
- 2 tea. Dijon mustard
- 1/4 cup red wine vinegar
- 1 tea. red pepper flakes
- 1 tea. pepper
Cornsticks made with Sour Cream

Preheat oven to 450 degrees
- 5 Tbsp. canola oil, divided
- 1 1/2 cups stone-ground white or yellow cornmeal
- 1 1/4 tea. baking powder
- 3/4 tea. salt
- 1 cup whole milk
- 1/4 cup sour cream
- 1 egg
- honey, optional
