In a medium saucepan mix jelly, mustard, onion and Worcestershire; bring to boiling
- 1/2 cup red currant jelly
- 1/2 cup prepared brown mustard
- 2 Tbsp. minced onion
- 1 Tbsp. Worcestershire sauce
- 1 lb. frankfurters, cut into 1" chunks
Chicken - Santa Fe Chicken Casserole

HEAT oven to 400°F. Mix Soup and 2 cups water in small sauce pan on stove and heat till boiling
- 1 cups regular white rice, uncooked
- 1 can (19 oz.) black beans, drained, rinsed
- 1 yellow pepper, chopped
- 1 can (10-1/2 oz.) condensed cream of chicken soup
- 2 cups water
- 1 can undrained rotel tomatoes and chilies
- 1/4 cup chopped cilantro or 1 tsp dried coriander
- 4 small boneless skinless chicken breast halves (1 1/4lbs)
- 1/2 cup Thick 'N Chunky Salsa or Picante Sauce
- 1 cup Mexican Style Finely Shredded Four Cheese Or Cheddar Or Reduced fat Cheese
Spaghetti Squah with feta

Cook spaghetti squash squash, let cool slightly and shred
- Spaghetti squash
- 2 Tbsp. olive oil
- 2 Tbsp. tomato paste
- 1/2 tea. dried oregano
- pinch cinnamon
- pinch sugar

Cheesecake - Ham 'n' Jalapeno Cheesecake

- 2 - 8 oz. pkgs. cream cheese, softened
- 1 cup pepper jack cheese, shredded
- 3 eggs
- 3 garlic cloves, minced
- 1 cup diced Deli Baked Ham
- 1 cup red jalapeno jelly (or green)
Chicken Piccata

Season cutlets with salt and pepper, then dredge in flour
- 2 boneless, skinness chicken breasts, cut in half and pounded into cutlets

- 1/2 cup chicken broth

- 2 medium fresh poblano chile peppers, stemmed, seeded and chopped

- 2 15-oz. cans pinto beans, rinsed and drained
- 2 medium tomatoes, chopped
- 1 cup chicken broth
- 1/4 cup snipped fresh cilantro
- 1/2 tea. salt
- 3 Tbsp. lime juice
- Shredded Monterey Jack cheese or Mexican mixture
