Salsa Mix (dry spices for salsa)

Mix with canned tomatoes for a quick salsa, or cream cheese for a spread
- 1 1/2 cups dried cilantro
- 1/4 to 1/2 cup garlic powder
- 1/2 cup dried chopped onion
- 1/2 cup dried sweet pepper flakes
- 2 Tbsp. salt
- 2 Tbsp. pepper
Baked Beans (kidney, pork&beans, lima beans)

In a Dutch oven, cook beef over medium heat until no longer pink; drain and set aside
- 1/2 lb. ground beef
- 1/2 lb. sliced bacon, diced
- 1 small onion, chopped
- 1/2 cup ketchup
- 1/2 cup BBQ sauce
- 1/3 cup brown sugar
- 2 Tbsp. molasses
- 1 can (16 oz) kidney beans, rinsed and drained
- 1 can (15 3/4 oz) pork and beans
- 1 can (16 oz) lima beans, rinsed and drained
Mac N Cheese - Potluck 16 servings

Cook macaroni to al dente; drain
- 3 cups uncooked elbow macaroni
- 1 pkg. (16 oz) Velveeta, cubed
- 2 cups (8 oz) shredded Mexican cheese blend
- 2 cups (8 oz) shredded white cheddar cheese
- 1 3/4 cups whole milk
- 1 can (12 oz) evaporated milk
- 3/4 cup butter, melted
- 3 eggs, lightly beaten
Corn Creamy Bisque

Melt butter in large saucepan over medium heat
- 1/4 cup butter
- 1 onion, chopped
- 1/4 cup flour
- 1/2 tea. salt
- 1/8 tea. pepper
- 4 cups milk
- 1 (15.5 oz) can corn, drained
- 1 lb. smoked pork sausage, diced
- 2 cups potatoes, cooked, peeled and cubed
- Garnish:L shredded Cheddar cheese
Hamburger Steak with Onion Gravy

In bowl, combine 1/3 cup soup with beef, crumbs, egg, salt and pepper
- 1 (10 1/2 oz) can Campbell's Onion Soup
- 1 1/2 lbs. ground beef
- 1/2 cup fine dry bread crumbs
- 1 egg, slightly beaten
- 1/4 tea. salt
- dash pepper
- 1 Tbsp. flour
- 1/4 cup ketchup
- 1/4 cup[ water
- 1 tea. Worcestershire sauce
- 1/2 tea. prepared mustard
Rosemary-Dijon Crown Roast of Pork

Heat oven to 400 degrees. in a saucepan, over high heat, bring broth, wine, dressing and garlic to a boil
- 1/2 cup beef broth
- 1/2 cup dry red wine
- 1 cup prepared balsamic dressing
- 1 Tbsp. chopped garlic
- 1 Tbsp. Dijon mustard
- 1 Tbsp. chopped fresh rosemary
- 2 Tbsp. chopped fresh parsley
- 2 tea. chopped fresh thyme
- 2 Tbsp. olive oil
- 1 crown roast of pork
Pumpkin Hollow Suprise (uses a whole pumpkin)

Cut the top from the pumpkin; scoop out seeds
- 5-7 lb. pie pumpkin
- 1-2 Tbsp. oil
- 2/3 cup raisins, golden raisins or currants
- 2/3 cup sweetened dried cranberries
- 4 apples, cored and chopped
- 2/3 cup chopped pecans
- 1 tea. pumpkin pie spice
- 1/2 to 1 cup brown sugar, packed
Tilapia Dijon

Preheat oven to 450 degrees
- 2 Tbsp. butter
- 1 Tbsp. Dijon mustard
- 1 tea. Worcestershire sauce
- 1 1/2 Tbsp. fresh lemon juice
- 4 tilapia fillets
- salt and pepper
- 3 Tbsp. fresh bread crumbs
- chopped parsley, for garnish
Ruby Red Grapefruit Jelly

Makes 5 half-pints
- 4 cups sugar
- 2 cups red grapefruit juice
- 2 Tbsp. lemon juice
- 1/2 of 6 oz. package (1 foil pouch) liquid fruit pectin
aDressing: Cafe Rio Tomatillo Dressing

Blend all ingredients in blender until smooth
- 1 cup mayonnaise
- 1 cup buttermilk
- 1 cup cilantro, fresh
- 2 tomatillos, quartered
- 1 pkg. ranch dressing mix
- 1 jalapeno, seeded, diced
- 1 Tbsp. lime juice
- 1 garlic clove
