Caesar Tortellini Salad

Cook tortellini according to package directions, drain and rinse in cold water
- 3 1/2 ups frozen cheese tortellini
- 3 plum tomatoes, chopped
- 1 fan (3.8 oz) sliced black olives, drained
- 1 medium ripe avocado, peeled and chopped
- 1/2 cup shredded cheddar cheese
- 1/2 cup creamy Caesar salad dressing
- \8 thin slices hard salami, cut into 2" strips

Combine all ingredients except oil
- 1/2 cup orange juice
- 1/4 cup balsamic vinegar
- 2 tea. lemon juice
- 2 tea. Dijon mustard
- 1 tea. soy sauce
- 1/4 cup extra-virgin olive oil
Balsamic Green Bean Salad

Bring a large pot of salted water to a boil
- 1 lb. fresh green beans, trimmed
- 2 Tbsp. chopped green onions
- 1 Tbsp. minced garlic
- 1/4 cup balsamic vinegar
- 1/4 cup olive oil
Spaghetti Squash Alfredo

Pierce spaghetti squash. In glass pie plate in microwave, cook 15 minutes or until squash feels soft and tender
- 1 spaghetti squash (about 3 lb)
- 1 pkg. (16 oz) frozen broccoli, peppers, onions and mushrooms (like Birdseye)
- 2 cloves garlic, peeled and chopped
- 1 jar (16 oz) alfredo sauce
- 1/4 cup chopped fresh basil

Press raspberries through a sieve, reserving juice
- DRESSING:
- 2 Tbsp. fresh raspberries
- 3/4 cup olive oil
- 3 Tbsp. cider vinegar
- 2 Tbsp. plus 1 tea. sugar
- 1/4 to 1/2 tea. pepper

- 4 medium ripe pears, thinly cliced
- 2 Tea. lemon juice
- 8 cups torn salad greens
- 2/3 cup pecan halves, toasted
- 1/2 cup fresh raspberries
- 1/3 cup (2 oz.) crumbled feta cheese

- 1 pkg. (8 oz) cream cheese, softened
- 1/2 cup butter, softened
- 1 jar (3 1/2 oz) prepared pesto
- 1/4 cup grated Parmesan cheese
- 1/2 cup chopped oil-packed sun-dried tomatoes

Watermelon, Mint Salad with Feta and Jalapenos

- 8 cups cubed seedless watermelon
- 1/2 cup mint cut into thin ribbons
- 1 medium jalapeno, seeds and membranes removed, diced into tiny cubes

- 1/4 freshly squeezed lime juice
