Brunch Coffee Cake

Serves 24 Great Thanksgiving or Christmas morning
- Glaze:
- 1 cup margarine, softened
- 1 cup sugar
- 2 eggs
- 1/2 tea. almond extract
- 2 cups flour
- 1 Tbsp. baking powder
- 1/2 tea. salt
- 1 cup sour cream
- 1 (8 oz) can whole cranberry sauce
- 1/2 cup slivered almonds
- 1 cup powdered sugar
- 2 Tbsp. milk
- 1/2 tea. almond extract
Bacon Wrapped Spam Bites

Preheat oven to 400 degrees
- 16 strips fully cooked bacon
- 1 12 oz. can Spam, cut into 32 cubes
- 32 toothpicks
- 1/2 cup honey mustard
- 1/4 cup brown sugar
- 2 Tbsp. apple juice
Chile Colorado

Heat oil in a skillet. Pat beef dry with paper towels
- 2 Tbsp. oil
- 2 lb. stew meat, trimmed of fat and cut into 1 1/2" pieces
- 1/4 cup water
- 1 28 oz. can Las Palmas red chile sauce
Napa Cabbage Salad

Thinly slice cabbage and place in a large gowl
- 1 medium head napa cabbage
- 4 green onions, tops included, chopped
- 3-5 Tbsp. butter
- 2 3 oz. pkgs. ramen noodles (seasoning packets removed)
- 2/3 cup slice almonds
- 4 Tbsp. sesame seeds
- 1/4 cup white wine vinegar
- 3/4 cup vegetable oil
- 2 Tbsp. soy sauce
- 1/2 cup sugar
Tortilla Sandwiches

3 tortillas layered with cheese and cut into wedges
- 2 cups shredded cheddar cheese
- 3/4 cup butter, softened
- 3 eggs
- 1/2 t3ea. garlic salt
- 1/2 tea. onion slat
- 18 flour tortillas (6")
- paprika
Meatloaf - BBQ'd

Preheat grill to 350 degrees
- 3 lb.s lean ground beef
- 3 red Anaheim chiles, stemmed, seeded and chopped
- 3/4 cup bread crumbs
- 1/4 cup grated parmesan cheese
- 1/4 cup grated asiago cheese
- 1/4 cup maple syrup
- 1/4 cup red wine vinegar
- dash balsamic vinegar
- 1/4 tea. salt
- 1/4 tea. freshly ground pepper
- 2 eggs
- BBQ sauce
Zucchini Relish - Neon Green (Robyn made)

In a large bowl, combine zucchini, onions, and bell peppers
- 5 cups finely chopped zucchini (5 small)
- 1 1/2 cups finely chopped onions (3 medium)
- 3/4 cup finely chopped green bell pepper (1 medium)
- 3/4 cup finely chopped red bell pepper (1 medium)
- 1/4 cup pickling salt
- cold water
- 1 3/4 cups sugar
- 1 1/2 cups white vinegar
- 1/4 cup water
- 1 tea.celery seeds
- 1 tea. turmeric
- 1/2 tea. mustard seeds
- 1-2 drops green food coloring (optional)
Orange Dijon Pork Chops

IN a small bowl, stir together marmalade, soy sauce and mustard until combined
- 1/2 cup orange marmalade
- 2 Tbsp. soy sauce
- 2 tea. Dijon mustard
- 1 Tbsp. vegetable oil
- 4 bone-in center-cut pork chops, about 8 oz. each
- 1/8 tea. salt
- 1/8 tea. pepper
Red Chile Halibut Chowder

In a soup pot, heat oil and onions over medium-high heat and cook until soft (3-5 min)
- 2 Tbsp. olive oil
- 2 large onions, thinly sliced
- 3 cloves garlic, minced
- 2 cups chicken broth
- 5 large potatoes, washed and chopped
- 1/4 cup red chile powder
- 1 lb. halibut, cut into chunks
- 8 oz. corn kernels
- 6 cups milk
- 1/4 tea,. salt
- 1/4 tea. pepper
Breasts - Sauteed in Mustard and Herb Sauce

Pound chicken breasts 1/2" thick
- 4 boneless skinless chicken breasts
- salt and pepper
- 2 Tbsp. olive oil
- 1 minced shallot
- 1/4 cup white wine
- 1/2 cup chicken broth
- 2 Tbsp. Dijon mustard
- 3 Tbsp. heavy cream
- 2 Tbsp. parsley, finely chopped
