Combine meatloaf ingredients
- SAUCE:
- 1 1/4 lb. ground beef (80% lean)
- 1 1/4 lb. ground pork
- 2 cups panko bread crumbs
- 1 cup finely chopped yellow onion
- 1 egg
- 1 tea. worcestershire
- 1 tea. granulated garlic
- 1 tea. dried tarragon
- 1 tea. salt
- 1 tea. pepper
- 1/2 cup bbq sauce
- 1/4 cup ketchup
Mushrooms - Spicy Mushrooms

Broil halved tomatoes, jalapenos (both skin-side up) and garlic cloves until charred, 6 minutes
- 2 plum tomatoes, halved
- 2 jalapenos, seeded
- 4 garlic cloves
- 1/2 cup onion, minced
- 1/2 lb. sliced mushrooms
- 1 Tbsp. olive oil
- 1/2 tea. salt
- 1/2 cup chicken broth
- 4 springs parsley, chopped
Breakfast Upside Down Cake

Rinse and drain blueberries from muffin mix; set aside
- 1 pkg. (18 1/4 oz) blueberry muffin mix
- 1 pkg. (1/4 oz) quick-rise yeast
- 1 can (8 oz) pineapple rings
- 1 egg, lightly beaten
- 1/3 cup packed brown sugar
- 1/4 cup butter, melted
- 4 maraschino cherries, halved
Turn BBQ sauce into Gourmet Sauce

Several add-ins to make storebought BBQ sauce gourmet
- SOUTHWEST CHIPOLTE
- 3/4 tsp. chipotle chili pepper
- 1.2 tea. cumin
- hot pepper sauce to taste
- (Spices up beef, chicken or pork)
- MUSTARD-MAPLE
- 2 Tbsp. Dijon mustard
- 2 Tbps. maple syrup
- (perfect to brush on salmon, turkey or pork just after grilling)
- CAROLINA-STYLE
- 1/2 cup apple cider vinegar
- 1/4 cup worcestershire sauce
- 1 tea. mustard powder
- (stir into coked pulld pork or brush over chicken)
- PEACHY GINGER
- 1/4 cup peach preserves
- 2 tea. grated peeled gresh ginger
- (great on ribs and chicken)
Jalapeno Cheese Soup

In a large saucepan place the chicken broth, celery, onions, garlic salt, and white pepper
- 6 cups chicken broth
- 8 celery stalks
- 2 cups diced onion
- 3/4 tea. garlic salt
- 1/4 tea. white pepper
- 2 lb. Velveeta cheese
- 1 cup diced jalapeno peppers
- sour cream
- flour tortillas
Dip - Chili Cream Cheese Dip

Spread the cream cheese on the bottom of a microwave-safe dish
- 1 package of cream cheese (nonfat or regular), at room temp
- 1 can of chili with beans (or homemade chili)
- 1/2 package of mild Cheddar or Mexican blend cheese
Plum-Peach Jam

4 plums = approx. 1 cup 1 large peach = approx
- 5 1/2 to 6 cups plums/peaches
- (I used 3+ cups plums, 2 1/2 cups peaches)
- 2 pouches liquid pectin
- 6 Tbsp. lemon juice
- 11 cups sugar
- 1/4 tea. Allspice
- 1/4 tea. Cloves
Baked Beans - Ranco Gordo Drunken Beans

Not sweet or tomatoey like canned baked beans, these are great over rice or served with fresh corn tortillas
- 1 Tbsp. vegetable oil
- 1 cup chopped onions, divided
- 2 garlic cloves, divided
- 2 cups dried pinto beans
- 3/4 cup dark, sweet beer (Killians, Michelob Amber bock)
- 1 thick slice bacon
- 3 serrano peppers, seeded and minced
- 1/2 lb. mushrooms, sliced
- 1/2 tea. salt
- 1/2 tea. pepper
- lime wedges
Tortellini (Cheese) with Tomatoes and Corn

- 1 package (9 ounces) refrigerated cheese tortellini
- 1 package (16 ounces) frozen corn, thawed or 3-1/3 cups fresh corn
- 2 cups cherry tomatoes, quartered
- 1/4 cup thinly sliced green onions
- 1/4 cup minced fresh basil
- 2 tablespoons grated Parmesan cheese
- 4 teaspoons olive oil
- 1/4 teaspoon garlic powder
- 1/8 teaspoon pepper
Ziti - Baked

- 6 oz. provolone cheese, sliced

- 2 Tbsp. grated Parmesan cheese
