Bread Pudding - with Jack Daniels Sauce

Preheat oven to 350 degrees
- PUDDING
- 1/2 cup butter, softened
- 1 cup sugar
- 5 eggs
- 2 cups heavy cream
- 1 Tbsp. vanilla
- 1 tea. cinnamon
- 2 loaves French bread, crusts removed and bread cut into 1/2" cubes
- 1/2 cups raisins
- JACK DANIELS SAUCE
- 1 cup heavy cream
- 1 cup sugar
- 1 Tbsp. butter
- 1/4 tea. cinnamon
- 1 Tbsp. cornstarch
- 2 Tbsp. water
- 2 Tbsp. Jack Daniels
Green Rice Pilaf

Preheat oven to 375 degrees
- 2 Tbsp. vegetable oil
- 1 cup uncooked long-grain white rice (not converted)
- 1/4 cup finely chopped white onion
- 2 fresh poblano chiles, roasted, peeled and chopped
- 6 green onions, thinly sliced
- 1 clove garlic, minced
- 1/4 tea. cumin
- 1 3/4 cups chicken broth
Chicken - grilled Hoisin Chicken

Brush the breasts with oil and season with salt and pepper
- 4 boneless, skinless chicken breawsts (about 1 1/2 lb. total)
- 1 tea. oil
- 1/4 tea. salt
- 1/4 tea. pepper
- 1/4 cup Hoisin sauce
Peach Melba Hand Pies

Preheat oven to 350 degrees
- 1 pkg. refrigerated pie crusts
- 1 cup peeled, pitted and finely chopped fresh peaches
- 1/4 cup sugar
- 1 Tbsp. cornstarch
- 8 fresh raspberries
- 1 egg, lightly beaten
Hawaiian Barbeque Beans

Combine beans, pineapple, BBQ sauce, and ginger in a 4 qt
- 4 cans (15 oz each) black beans, rinsed and drained
- 1 can (20 oz) crushed pineapple, drained
- 1 bottle (18 oz) BBQ sauce
- 1 1/2 tea. minced fresh ginger
- 1/2 lb. bacon strips, cooked and crumbled
Rhubarb Coconut Bread Pudding

Combine sugar and water in a saucepan; bring to boil
- 1 cup sugar
- 3/4 cup water
- 2 Tbsp. butter
- 3 cups sliced fresh or frozen rhubarb (1/2" pieces)
- 1 egg, beaten
- 1/2 tea. vanilla
- 4 cups soft bread cubes, lightly toasted (about 5 slices)
- 1 cup flaked coconut, divided
Pumpkin Carrot Cake w/ Orange Cream Cheese Frosting

Preheat oven to 325 degrees
- CAKE
- 2 cups flour
- 1 cup sugar
- 2 tea. baking soda
- 1 tea. cinnamon
- 1/2 tea. salt
- 2/4 cup canola oil
- 4 eggs
- 1 cup canned unsweetened pumpkin
- 3 large carrots, peeled and grated (about 3 cups)
- 1 cup chopped pecans
- 1/2 cup raisins
- FROSTING
- 1 pkg. (3 oz) cream cheese, softened
- 2 Tbsp. butte,r softened
- 2 Tbsp. orange juicer
- 1 Tbsp. orange zest
- 3 cups sifted confectioners' sugar
Pickled Beets and Eggs

Place beets, onion, and peeled eggs in a non-reactive glass or plastic container
- 8 eggs, hard-boiled
- 2 (156 oz) cans whole picked beets, juice reserved
- 1 onion, chopped
- 1 cup white sugar
- 3/4 cup cider vinegar
- 1/2 tea. salt
- 1 pinch pepper
- 2 bay leaves
- 12 whole cloves
Salsa Roll-ups (with flour tortillas)

Mix cream cheese an salsa
- 4 oz. cream cheese
- 4 6" flour tortillas
- 1/4 tea. chili powder
- 3 Tbsp. salsa
- 1/2 cup shredded Mexican style cheese
Chicken Flavored Rice Mix (makes 3 batches)

- 3 Tbsp. chicken bouillon granules
- 3 Tbsp. dried parsley flakes
- 1 Tbsp. dried celery flakes
- 1 Tbsp. dried minced onion
- 1 Tbsp. sugar

- 1 cup long grain rice
- 2 Tbsp. butter
- 2 cups water
