Easter - Bird Nests

Melt baking chips; set aside 1/2 cup
- 2 pkgs. white baking chips (10 oz. each)
- 1 pkg. pretzel sticks (10 oz)
- 25 Peeps chicks
- small candy eggs
Ribs - Slow Cooker BBQ Ribs

Directions 1. Spray the inside of a 5- to 6-quart slow cooker with cooking spray
- Ingredients
- 3 1/2 lbs pork loin back ribs (I've used side ribs as well, and they're just as tasty)
- 1/4 cup packed brown sugar
- 1/2 tsp. fresh ground pepper
- 3 tbsps. liquid smoke (we used hickory flavored)
- 2 cloves garlic, finely chopped
- 1 tsp salt
- 1 medium onion, sliced
- 1/2 cup Coca Cola
- 1 1/2 cups BBQ sauce
Nuts - Chilied Peanuts and Pumpkin Seeds

Turn on oven to 250 degrees and position a rack in the middle
- 2 cups roasted peanuts (preferably without salt)
- 2 Tbsp. fresh lime juice
- 2 tea. ancho chile powder, plus a little arbol chile powder if you like it spicy
- salt
- 1 cup toasted, salted pumpkin seeds
Corn - Grilled Mexican Street Corn Salad

Heat the grill. Remove corn from water and pat dry
- 6 large ears corn (3 with husks and silks removed, all 6 soaked in water for 10 minutes)
- 1 Tbsp. oil
- 4 Tbsp. butter, melted
- 1/2 cup mayonnaise
- 1/4 cup chopped freshly cilantro, plus sprigs to serve
- zest and juice of 1 lime
- 2 cloves garlic, finely grated
- 1/2 tea. chipotle chili powder
- flaked sea salt
- 1/2 cup queso anejo
- 1/2 cup grated Asiago cheese (or a grated Italian cheese blend)(; plus extra to garnish
- 6 slices bacon, cooked and crumbled
- ground black pepper
Peanut Sauce

With motor running, drop ginger and garlic clove into a blender and blend until finely chopped
- 1 1" piece ginger, peeled
- 1 small garlic clove
- 1/2 cup creamy peanut butter
- 2 Tbsp. soy sauce
- 1 Tbsp. fresh lime juice
- 1 tea. packed brown sugar
- 1/4 to 1/2 tea. crushed red pepper flakes
- OR***
- 1/4 cup creamy peanut butter
- 1 Tbsp. toasted sesame oil
- 1 Tbsp. maple syrup
- 1 Tbsp. lime juice
Steel Oats with Raisins

Coat bowl of a slow cooker with cooling oil spray
- 3 1/4 cups water
- 1/4 tea. cinnamon
- 1/4 tea. salt
- 1 cup steel-cut oats (not quick cooking)
- 1/2 cup raisins
- 1/2 tea. vanilla
Southwest Pasta Casserole

Preheat oven to 350 degrees
- 12 oz. ziti pasta
- 1 an (15 oz) Hormel Chili with No Beans
- 1 can (10 oz) enchilada sauce
- 1 can (4.5 oz) chopped green chiles
- 1/4 cup chopped fresh cilantro
- 1 1/4 cups shredded Cheddar cheese
Hearty Cabbage Soup (Tex-Mex)

In large saucepan, cook beef and onion over medium heat until meat is no longer pink; drain
- 1 lb. ground beef
- 1 medium onion, chiopped
- 3 1/2 cups shredded cabbage
- 1 medium zucchini, halved and thinly sliced
- 1 cup sliced fresh mushrooms
- 1 carton (18.3 oz) ready-to-serve sweet red pepper soup
- 1 can (10 oz) diced tomatoes and green chilies, undrained
- 1/4 tea. hot pepper sauce
- 1/4 tea salt
- 1/4 tea. pepper
- 1/4 cup grated Parmesan cheese
Chili Beer BBQ Sauce

Combine all ingredients in a small saucepan
- 1 1/2 cups beer
- 1 small onion, chopped
- 3/4 cup chili sauce
- 2 Tbsp. soy sauce
- 1 Tbsp. brown sugar
- 2 tea. chili powder
- 2 garlic cloves, minced
- 1/4 tea. cayenne pepper
- 1/4 tea. ground mustard
- 1/8 tea. ground cumin
Rhubarb-Cranberry Crisp

Preheat oven to 350 degrees
- 9 cups frozen rhubarb, thawed and drained
- 1 cup dried cranberries
- 1/3 cup cranberry juice
- 2 Tbsp. cornstarch
- 1/2 cup sugar
- 1/4 cup brown sugar
- 3 Tbsp. lemon juice
- 3/4 cup flour
- 1/3 cup Grapenuts cereal
- 1/2 cup chopped walnuts
- 3/4 cup brown sugar
- 1/2 tea. salt
- 8 Tbsp. butter, chilled and cut into small pieces
