Lemon Chicken

Spray a 10" skillet with cooking spray and heat over medium high heat for 1 minutes
- cooking spray
- 1 1/4 lb. skinless, boneless chicken breast halves
- 1 can cream of chicken soup
- 2 Tbsp. water
- 1 Tbsp. chopped fresh parsley or 1 tea. dried parsley
- 1 Tbsp. lemon juice
- 1/2 ta. paprika
- 1/4 cup chopped green or red pepper
- 4 lemon slices
Antipasto Pasta Salad

Cook pasta for 8-10 minutes or until cooked but still firm
- 1 lb. small seashell pasta
- 1/4 lb. Genoa salami, chopped
- 1/4 lb. pepperoni, chopped
- 1/2 lb. Asiago cheese, diced
- 1 (6 oz) can sliced black olives, drained
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 3 tomatoes, chopped
- 1 env. dry Italian-style salad dressing mix
- 2/3 cup olive oil
- 1/4 cup balsamic vinegar
- 2 Tbsp. dried oregano
- 1 Tbsp. dried parsley
- 1 Tbsp. grated Parmesan cheese
- salt
- pepper
Easy Cheesy Bacon Quiche

Preheat oven to 350 degrees
- 1/2 (15 oz) pkg. refrigerated pie crust
- 1 lb. bacon, cooked and crumbed
- 1 (8 oz) pkg. shredded Colby and Monterey Jack cheese blend
- 6 eggs
- 3/4 cup half-and-half
- 1/2 tea. salt
- 1/2 tea. pepper
- Garnish: Chopped bacon
Rhubarb Zucchini Bread

In 2 1/2 qt. pan, combine rhubarb, orange juice and 2 Tbsp
- 2 cups thinly sliced rhubarb
- 2 Tbsp. orange juice
- 2 cups sugar
- 3 eggs
- 1 cup salad oil
- 2 tea. vanilla
- 2 cups shredded zucchini
- 3 cups flour
- 2 tea. baking soda
- 1 1/2 tea. cinnamon
- 3/4 tea. nutmeg
- 1/2 tea. salt
- 1/2 tea. baking powder
- 1 cup chopped nuts
Dip - Baked Spinach Dip in Bread Bowl

In a large mixing bowl, beat the cream cheese and mayonnaise until blended
- 2 pkgs. (8 oz each) cream cheese, softened (not fat-free)
- 1 cup mayonnaise )no fat-free)
- 1 pkg. (10 oz) frozen chopped spinach, thawed and squeezed dry
- 1 cup (4 oz) shredded cheddar cheese
- 1/2 lb. sliced bacon, cooked and crumbled
- 1/2 lb. finely diced ham
- 1/4 cup chopped onion
- 1 Tbsp. dill weed
- 1-2 garlic cloves, minced
- 1 round loaf (1 lb) unsliced sourdough bread
- Assorted fresh vegetables
Three Cheese Bacon Bites

Cut rolls into four equal pieces and place in a large bowl
- 18 Rhodes Dinner Rolls or 12 Rhodes Texas rolls, thawed but still cold.
- 12 bacon strips, cooled and crumbed
- 1 cup (4 oz) shredded mozzarella cheese
- 1/2 cup shredded Asiago cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup thinly chopped green onions
- 1/4 cup Italian salad dressing
- 1 garlic clove, minced
Cold Sesame Noodles with Crunchy Vegetables

Bring large pot of water to boil and salt it
- salt
- 4 cups chopped fresh crunchy raw veggies; celery, snow peas, bell peppers, cucumbers, green onions
- 12 oz. fresh Chinese egg noodles or long pasta like linguine
- 2 Tbsp. dark sesame oil
- 1/2 cup tahini, peanut butter or a combined of both
- 2 Tbsp. sugar
- 3 Tbsp. soy sauce, or to taste
- 1 tea. minced fresh ginger (optional)
- 1 Tbsp. rice or white wine vinegar
- Hot sesame oil or Tabasco sauce to taste
- 1/2 te. black pepper, or more to taste
Lemon Bread

Preheat oven to 350 degrees
- 1 1/2 cups flour
- 1/2 tea. salt
- 1 tea. baking powder
- 6 Tbsp. butter, softened
- 1 cup sugar
- 2 eggs
- 1/2 cup milk
- grated peel and juice of 1 lemon
- 14 cup poppy seeds
- 1/2 cup confectioners' sugar
Spicy Cranberry Drink

In a saucepan, cook the cranberries in 2 cups water until they pop
- 2 cups fresh or frozen cranberries
- 1 cup sugar
- 1/4 cup hot pepper jelly
- 7 whole cloves
- 1/2 cup fresh orange juice
- 1/4 cup fresh lemon juice
Snack Mix - BBQ Snack Mix

Preheat oven to 250 degrees
- 1/4 cup butter, melted
- 3 Tbsp. bbq sauce
- 2 Tbsp. Worcestershire sauce
- 2 Tbsp. corn syrup
- 1 (1 oz) ranch dressing mix
- 1 Tbsp. smoked paprika
- 1/4 tea. dry mustard
- 4 cups Chex cereal
- 4 cups Crispix
- 3 cups Cheez-Its and/or Mini Wheat Thins
