Salmon Mousse

Place 3 tablespoons cold water in a small saucepan, and sprinkle with gelatin; let soften, 5 minutes
- 1 teaspoon unflavored gelatin, (from a 1/4-ounce envelope)
- 4 ounces smoked salmon, coarsely chopped
- 1 1/4 cups sour cream
- 1 to 2 tablespoons fresh lemon juice
- coarse salt
- fresh dill, for garnish (optional)
- crackers or baguette slices, for serving
Roasted Pepper and Goat Cheese Sandwiches

- 4 large red or yellow bell peppers
- 2 Tbsp extra-virgin olive oil
- 1 Tbsp balsamic vinegar
- 2 garlic cloves, minced
- 2 tsp kosher salt
- 1 tsp freshly ground pepper
- 2 Tbsp drained jarred capers
- 1 loaf (1 lb) ciabatta, halved horizontally
