Teriyaki-Glazed Halibut with Cucumber Noodles

- 1/3 cup mirin or rice wine
- 1/2 cup soy sauce
- 1 tablespoon sugar
- 2 teaspoons minced gingerroot
- 1 teaspoon minced garlic
- Pinch cayenne
- 4 (5 to 6-ounce) halibut fillets
- About 1/4 cup black and white sesame seeds
- 2 tablespoons vegetable oil
- Minced green onions, as garnish
- Cucumber Noodles, recipe follows
- 2 large cucumbers, peeled, halved lengthwise, and seeded
- 1 large carrot, peeled and cut in thin matchsticks, about 2-inches in length
- 1/4 cup rice wine vinegar
- 1/4 cup chopped green onions
- 2 teaspoons minced gingerroot
- 1 teaspoon Asian sesame oil
- 1 teaspoon sugar
- 1/2 teaspoon red pepper flakes
- 1/2 teaspoon salt

- 2 cups water
- 1/3 cup sugar
- 1/2 vanilla bean, split in half
- 1 tablespoon Calvados or brandy
- 1/2 teaspoon ground cinnamon
- 1/8 teaspoon ground cloves
- 1/8 teaspoon ground nutmeg
- Pinch salt
- 8 large Golden Delicious apples, peeled, cored, and cubed
Cucumber and Red Onion Salad

1-In a medium size bowl combine your cucumber and red onion slices
- 3 large cucumbers, peeled, seeded, and cut into 1/2 inch pieces on a diagonal.
- 1/2 to 1 red onion, peeled and thinly sliced
- 1 teaspoon celery seed
- 4 tablespoons extra virgin olive oil
- 3 tablespoons white wine vinegar (you could also use lemon juice, champagne vinegar, or apple cider vinegar)
- 1 teaspoon Dijon style mustard
- 1 teaspoon sea salt
- 2-3 garlic cloves, finely minced or put through a garlic press

- 1 cup (2 sticks) (226 grams) unsalted butter, room temperature
- 1/2 cup (60 grams) powdered (confectioners) sugar
- 1 teaspoon (4 grams) pure vanilla extract
- 2 cups (260 grams) all-purpose flour
- 1/4 teaspoon (2 grams) salt

1) Combine all ingredients, except crust, in a large mixing bowl; use and electric mixer to beat until smooth
- 1 (14-ounce) can sweetened condensed milk
- 1 cup pureed avocado (from 1 or 2 large fresh avocados)
- cup fresh lime juice
- 2 egg yolks
- 1 teaspoon grated lime zest
- teaspoon salt
- 1 pre-baked 9-inch pie crust (or try Graham cracker crust)
