Apple Cake

This wonderful Passover recipe is courtesy of Arthur Schwartz and can be found in his book, "Jewish Home Cooking
- Nonstick cooking spray
- 1/2 cup coarsely chopped walnuts or pecans
- 1 1/2 cups sugar
- 3/4 teaspoon ground cinnamon
- 3/4 teaspoon freshly ground nutmeg
- 3/4 teaspoon mace
- 3/4 teaspoon ground ginger
- 3 large eggs
- 1/3 cup vegetable oil, plus more for baking dish
- 3/4 cup matzo cake meal
- 5 medium apples, such as Golden Delicious or Crispin, peeled, cored, halved, and cut into 1/4-inch-thick slices (about 5 cups)
- 1/3 cup raisins (optional)
Eggnog Puddin' Pie

- Crust
- 1 cup Fiber One Original bran cereal
- 2 sheets (8 crackers) low-fat honey graham crackers, broken into pieces
- 3 tbsp. Splenda No Calorie Sweetener (granulated)
- 1/2 tsp. cinnamon
- 1/4 cup light whipped butter or light buttery spread (like Brummel & Brown)
- Filling
- 2 cups fat-free milk
- 1 small (4-serving) box Jell-O Sugar Free Fat Free Vanilla Instant pudding mix
- 1 tsp. rum extract
- 1/2 tsp. vanilla extract
- 1/4 tsp. ground nutmeg
- 2 dashes cinnamon
- 2 cups Cool Whip Free, thawed and divided
- Optional: additional cinnamon, for topping

Preheat oven to 400ºF. In a medium saucepot over medium-high heat, combine water, butter and salt
- 6 tablespoons (3/4 stick) butter
- 1 cup water
- 1/2 teaspoon salt
- 1 cup flour
- 4 eggs
- 1 cup Gruyère cheese, shredded

- 3/4 C. Tapioca Flour

Meatballs in Peanut Curry Sauce

- 1/2 cup all-purpose flour
- 1-1/2 teaspoons coarse salt
- 1/4 teaspoon freshly ground black pepper
- 1 pound ground beef, medium lean (80 or 85%)
- 2 tablespoons vegetable oil; more if necessary
- 4 cloves garlic, coarsely chopped
- 1 tablespoon red curry paste (I like Krung Gaeng Ped brand); more to taste
- 1 cup canned coconut milk (refrigerate the can, don't shake it, and use the thick cream at the top)
- 2 tablespoons chunky peanut butter
- 2 teaspoon fish sauce (nam pla) or to taste
- 1-1/2 tablespoons sugar or to taste
- 1 teaspoon chopped fresh mint or basil leaves for garnish

- 1 cup mung bean sprouts
- 1/2 cup grated carrot
- 2 tablespoons finely sliced green onions
- 4 cloves finely chopped garlic, divided
- 1/2 pound ground turkey or hamburger (optional)
- OR
- 1 cup mixture of mushrooms, more cabbage, bean sprouts and/or carrots
- 2 teaspoons grated ginger root
- 14 egg roll skins found in produce section of grocery store
