  • Nonstick cooking spray
  • 1/2 cup coarsely chopped walnuts or pecans
  • 1 1/2 cups sugar
  • 3/4 teaspoon ground cinnamon
  • 3/4 teaspoon freshly ground nutmeg
  • 3/4 teaspoon mace
  • 3/4 teaspoon ground ginger
  • 3 large eggs
  • 1/3 cup vegetable oil, plus more for baking dish
  • 3/4 cup matzo cake meal
  • 5 medium apples, such as Golden Delicious or Crispin, peeled, cored, halved, and cut into 1/4-inch-thick slices (about 5 cups)

  • 1 cup Fiber One Original bran cereal
  • 2 sheets (8 crackers) low-fat honey graham crackers, broken into pieces

  • 1/2 tsp. cinnamon
  • 1/4 cup light whipped butter or light buttery spread (like Brummel & Brown)

  • 2 cups fat-free milk
  • 1 small (4-serving) box Jell-O Sugar Free Fat Free Vanilla Instant pudding mix
  • 1 tsp. rum extract
  • 1/2 tsp. vanilla extract
  • 1/4 tsp. ground nutmeg
  • 2 dashes cinnamon
  • 2 cups Cool Whip Free, thawed and divided
  • Optional: additional cinnamon, for topping
